A Bite of the Ocean, Understanding the Benefits of Saltwater Agriculture with Sam Norton
Join us for a conversation with College of Charleston alumnus Sam Norton, founder of Heron Farms in Charleston, S.C. Billed as the world’s first vertical indoor saltwater farm, the company grows sea beans, a healthy, plant-based salt alternative. Norton shares his fascinating journey from plucking sea beans in Lowcountry marshes as a child to studying them for a graduate research project to growing them year-round in an indoor facility. The plants, which Norton says “taste like the ocean,” have become popular with some of Charleston’s award-winning chefs, who use them as a salt substitute in their dishes.
