Chicory

Cichorium intybus

Appearance: Chicory is a bushy wildflower that is  common in North America. It has long, thin leaves and blue flowers with many petals.

During the Passover meal, God instructed His people to eat bitter herbs to commemorate the bitterness of  slavery. Chicory was a common plant at this time and may have been one of these bitter herbs.

And they shall eat the flesh in that night, roast with fire, and unleavened bread; and with bitter herbs they shall eat it.
