This week's  edition of Ghana in Focus is Part II of our series looking into Ghanaian cuisine.  We take at look at 2 more popular Ghanaian dishes, Waakye and Nkontomire stew.

Waakye is a very popular dish in Ghana.  It is often eaten as a morning meal or for lunch in the afternoon.  Waakye is made with red beans and white rice and is a food that has it's origins amongst the Hausa speaking peoples of Northern Ghana and as these Hausa speaking peoples migrated to other pats  of Ghana it has become one of the most popular and widely eaten dishes in Ghana.

In actual fact Waakye is very similar to the Jamaican Rice and Peas, the only difference is that rather than using red beans the Jamaicans use kidney beans . --- so this shows the culinary links between Hausa speaking peoples of Ghana and Jamaicans.  In fact some Jamaicans may be able to trace their ancestral origin to the Northern part of Ghana.

Another popular Ghanaian dish is Nkontomire/Palavar stew which in essence is spinach.  This is a very versatile dish that can be eaten with boiled yam/plantain, boiled sweet plantain and steamed white rice.
