You're just really prepped not to do that. Yeah, so me and a good friend were talking today and I had called him because I needed some he's a master electrician and so I always call when I do electrical work because I'm not a master electrician and I uh respect electricity, you know. Yeah. And so I called him and we had we ended up having a good talk. We always talk about like as it's funny because we've known each other since we were kids and our conversations have changed from like how many mini Snickers bars can we eat out of this box full of candy to these days it's like what prescription drugs could we take if we actually like which we don't take any. Like, are they actually good or are they bad? Or and so I told them what I told you earlier, which was that my opinion is GLP ones like Lycosempic weight loss drugs, they're just the weight loss version of AI. Because if you see somebody lose a lot of weight, like you never know if they actually earned it. And the reason I told him that and told you that is like last year I, you know, I'd reached my mid-40s and I got to the point where I'd just kind of quit paying attention and I, for the first time in my life, cleared 200 pounds and it just came out of nowhere, and I was like, what in the world? So this year I just decided to to lose weight the old-fashioned way, which was just to eat good, you know, decently and fast. I fasted a lot, which is really good, you know, um, for spiritual reasons as well, but it's really good for your health. Um, this is not medical advice for the listener, of course. Yeah, you always gotta say because men and women are different. And anyways, I did a lot of research, but I've done done a lot of fasting in the past, and anyways, so I lost 26 pounds so far. Not I'm not to my quite to my goal, but anyways, yeah, it's like I told you I was like, you know, I'm like you lose 26 pounds, and it took it's taken, you know, seven or eight months, but it's like I wonder if people are like, I wonder if he's done the old oz epic, you know.
SPEAKER_05So you look very healthy.
SPEAKER_01GLP wants just the weight loss version of AI. AI does all that, you know, so we never know. Like, is it is it is that picture AI, is that article AI?
SPEAKER_05Or did AI help them?
SPEAKER_01Yeah, exactly. So you want to use that stuff smartly and sanely, but man, it's just to me, it's so I'm so glad you bring that up because this goes along with my question.
SPEAKER_05How do you do this? Like, is it really do we know each other this well? We're like I've been keeping this secret from you for like I don't know.

Numbers 22, verse 23, and the donkey saw the angel of the Lord standing in the road with a drawn sword in his hand, and the donkey turned aside out of the road and and went into the field. And Balaam struck the donkey to turn her into the road. You know how often in life do we do we smack our proverbial donkeys? And the donkey's like, bro, there's an angel with a sword in the road. It's not God's plan for you. Like, stop hitting me. That's the Bible lesson out of that verse. If you don't pay attention to any of the context, yeah. Isn't there a lot? There's a lot of like lessons. The reason I bring that up is there's so many lessons online that they don't pay attention to biblical context. They teach a, you know, a Bible verse or something, and they're like, Stop smacking your donkey, bro. You know, like and then these preachers they have these huge muscles, and everybody goes along with them because they're so confident. But the angels in the s the angel with the swords in the middle of the road. Stop hitting that donkey.
SPEAKER_05Stop hitting the donkey, everybody.
SPEAKER_01Come on. You don't get that? You don't get the lesson. That's a quick lesson for tonight. Biblical lesson right there. I feel like maybe it's a Bible verse.
SPEAKER_05This would have been a good day to discuss what you just said prior to. I don't really know where to go.

SPEAKER_01Because you're you're a good stock, stock that talks a lot, and and so if you're at a loss for words, I've done it right.

SPEAKER_05Okay, so Jonah is going through some church history.
SPEAKER_01Uh-huh. Jonah is our second son, second oldest.
SPEAKER_05Second oldest. And uh he was telling me about this and and he wrote it down for me because I was like, that's kind of funny. Okay. Fifty years after the Council of Nicaea, he has not amazing handwriting. Okay, another ecclesiastical dispute arose. The semi-Aryans wanted the creed to read, quote, being of similar substance with the father, dot dot dot. While the other Orthodox Christians, not the Eastern, upheld the original, quote, being of one substance with the father. The words in the Greek, um, I don't speak Greek, so I'm gonna say homosios, maybe meaning similar, and homosios, meaning same or one. Okay. Alright. One historian joked that the Christians were arguing over a diphthong. And they were, but that diphthong made all the difference. Someone else likened it, this is the funny part, I think, likened it to a woman touring Europe. She cabled her husband, quote, have found wonderful bracelet, price $75,000. May I buy it? Question. He replied, quote, no comma price too high. However, the cable operator missed the comma and said, No price too high. The husband sued the company and won over a comma.
SPEAKER_00Oh, that's hilarious.
SPEAKER_05Punctuation is important, everybody.
SPEAKER_00Punctuation, that's right. Where you put your commas is important. Isn't that funny? That is funny.
SPEAKER_05So yeah, I just I thought that was funny. History is so much fun to go over.
SPEAKER_01And so today we were driving to uh our daughter daughter's ballet, and I am fascinated, like I've I've gone into depth of the in the time in the uh era what am I trying to say? In the history and the times of Henry VIII. Oh, okay. Because so much of it corresponds to Tyndall and all of the characters William Tyndale. When William Tyndale, and all of the characters that come into play with how the Bible got into the hands of the common man and you know the literal fight between Catholicism and Luther and Luther and and all of that stuff, and so it's just so fascinating, God's hand and all of it. So, anyways, I w I just went on and on and bothered you about her a lot. It wasn't bothersome. No, okay.
SPEAKER_05No, I find that I love history.
SPEAKER_01Yeah, so it's so great. But uh yes, thank you to Jonah for sharing fun little story there. Perfect. Speaking of our coffee company, we have been developing our first light roast only blend. And this would be our fifth blend that we've developed. Um, and it's our first light only, and this we decided to call it the pale horse blend. And so that'll be coming out soon. We're kind of excited about that. Yeah, we're not light roast drinkers, but there are a lot out there. And you have to be careful when you develop a light roast because you have to balance that acidity. Um light roasts are more uh uh uh uh acidic in nature, caffeinated, right? They're more caffeinated, and so a lot of people think, oh, I can't drink dark coffee because I have stomach problems. Well, you should be drinking dark coffee, it's the light coffee that will bother your tummy um more, and that's just how it goes. So, anyways, we have to we've figured out how to develop that, and it's kind of fun. And then this week, my entry into the global coffee awards. This is my second nomination into being involved in that award. Um, it's the the global, it's the most prestigious coffee uh competition in the world. And so this is our second year to be nominated, and we put our entry in, and they judge this week. So I haven't heard the results, obviously. And of course, very quick. They take a little while because for well, for our region, the US region, U.S. Canada region, there were 904 coffees that they judged. There was a lot of a lot of judging, and it took them I think three or four days to go through all those coffees.
SPEAKER_05And so they must have been so awake.
SPEAKER_01Yeah, they don't they don't drink at all. Hopefully. They do when they get to hours. Yeah, that's right.
SPEAKER_05Like that, that is a very nice finish. Yeah, what they say, whatever they say about coffee.
SPEAKER_01Um, yeah, so we've got that going on, so you can wish us luck or whatever. I it's like, you know, how in the world out of 904 would I have a shot? Because there's so many good roasters, but it's been really neat to figure out how to compete and all that stuff, so it's kind of fun to be one of the roasters that's doing that. I was at work the other day and a guy stopped me. We've seen each other in the hall, we both carry around coffee mugs, and we kind of salute each other with our coffee in the morning. He's kind of a funny guy. I don't know anything about him. We just salute with our coffee mugs with the coffee. We're the coffee guy, yeah.
SPEAKER_03Yeah.
SPEAKER_01He stops me in the hall a couple days ago and he goes, Hey, uh, what's your name? And I was like, and I said, Told him my I said, told him my name. And he goes, Oh man, you look just like a guy I know over at this other, you know, division of of work. And and I said, Oh, yeah, sorry, I'm not him, or something like that. And he starts walking away, and I go, Wait, is the guy that you know called is his name Brad Pitt? And he laughs, and he laughs really hard, and I was like, Well, that was he laughed a little too hard for like that. I guess I don't look like anything like Brad Pitt.
SPEAKER_04But it made me laugh.
SPEAKER_01It made me laugh. So I was he's like, You look just like a guy now. I was like, Is this Brad Pitt? And he goes, Dead one, ugly. So that was pretty fun.
SPEAKER_05Trash face.
SPEAKER_01So something that we've been doing more recently is I'm just trying to go through all the things that we're doing.
SPEAKER_05Oh, we're doing a lot.
SPEAKER_01We got a cold plunge tub and we're training in cold plunging, me and the boys and my dad. And so we've started off obviously pretty couldn't I mean comparatively warm. We're trying to get down to almost freezing. But uh, we were kind of surprised how cold 65 degrees is. It is really cold to start with, and so we're all trying to do like two weeks at a time and then lower it about five degrees every two weeks or so. Um but the other day I heard about uh something called um deprivation tank floating. And some of the listeners may know what this is, but I had always wanted to do a deprivation tank. And I guess the it's it's a it's called a therapy, and I'm not really big into like therapy. I don't need that, you know, it sounds haughty, but it's like I'm the therapeutic like massage.
SPEAKER_03Right.
SPEAKER_01Like which we've done I have a hard time with like therap like therapy massaging because it's hard for me to relax. Yeah. I don't like when people touch me in any way, you know. And so it's like you sit there for an hour or thirty, you know, whatever it is, thirty minutes, and you're just struggling to relax. You're supposed like the whole time in my head, I'm like, I'm supposed to be relaxing, but this person is touching me.
SPEAKER_05You're paying for it. I know what you think was gonna happen when you went. I don't know.
SPEAKER_01And people are supposed to enjoy it, and I just couldn't figure out how to enjoy it.
SPEAKER_05So you were you were trying to find a way to relax, and yeah. I think that was very brave of you to try that.
SPEAKER_01So I heard about a guy that I respect, he really talks about how great it is to relax like once a month or so in these deprivation tanks and these floating tanks.
SPEAKER_05Only relaxing once a month.
SPEAKER_01And if you don't know what that is, well, I mean, pretty much, right? I mean it's like an escape. You so basically it's a pod that you close the door and there's like no light if you don't want it, no sound if you don't want it. Put in these earplugs, they have a thousand pounds of Epsom salt, like good magnesium chloride salt that that are in the water. Therapy grade, yeah. Or pharmaceutical grade or whatever they call it. And the water is about twelve inches, ten, ten or twelve inches, I can't remember, and it's supposed to be the exact temperature of your skin. So what happens is you lay on your back and you float because of the salt, so you just literally lay there, and then after a few minutes, it feels like you're just floating in like just floating in air, like because the water's supposed to be the same temperature as your skin. So I decided to give it a try. I was told you may want to try 30 minutes on your first try, and I was like, nah, screw that. So I did an hour instead.
SPEAKER_05Don't touch me. Yeah. I don't want your 30 minutes. Yeah, I want an hour. Tell me what to do.
SPEAKER_01Well, because I had read that like you don't really get relaxed. You don't really get like the full effects until an hour. So I'm like, I want to like pay for it and you know, so I go in there and and if you've ever seen, if you've ever watched the show New Girl from back in the day in the in the late 2000s, the character Jake on there, he meets a Chinese real name. Oh, oh, what's his what's his name name on the show? Is his real name's Nick. Yeah, so Jake Gyllenhaal, right? Jill no, Jake. That's another actor. Jake something. Johnson. Johnson.
SPEAKER_05If you say so. I think so.
SPEAKER_01I think that's his. I know Name. So Nick on the show, he meets a he's sitting on a park bench and a chi old Chinese guy walks up and just stares at him. And so the scene goes where like his he just names him Chan. And the guy never talks. The Chinese guy never talks, and by the end of the episode, he's taking them, he just tells him but by hand movements, just come with me to relax. So he brings him to the like this Chinese tub, and he's just he's just carrying him on like a baby inside of this pool, and the look on Nick's face is like, I guess I'm supposed to enjoy this.
SPEAKER_05He's so stupid.
SPEAKER_01Okay. He says something like, I guess I'm going with it, man. I'm going with it. And that's what I kept thinking about while I was in the float tub. Is I was just being carried around by an old Chinese man inside of a completely dark and soundproof, you know, pod. And it sounds good because like it's it's a good idea. Like you get get away from all, like it gives you an hour of complete, you know, deprivation from the world and cell phones and all that stuff. But and and the salt's really good for you. The magnesium's great, but I don't know. I kind of I don't know if I'm gonna go back because uh here uh once again the therapy thing is other people that I don't know float in that same tub.
SPEAKER_04Sure.
SPEAKER_01Now they supposedly clean it like it's supposed to go through like eight cycles of cleaning or whatever per between customers. That's not enough for some people. I've seen some people if they came out of there after I'd just turn away and be like, nah, I'm gonna come back never.
SPEAKER_05You know, so uh pretty much anything once. Yeah, you're very brave and yeah, I want to experience it. Some cer certain things I'm like, yeah.
SPEAKER_01Now I will say this, like I I kind of got it's not boredom, but it was I did try and relax. And I was by myself, so it's like I get to just okay, relax as much as you I my brain will allow me to relax. Right. And it was really neat, like you're laying there, you're floating, like you don't have to, you're completely relaxed, you're floating, but the water was hot and it was it was a little I had to kind of there is a claustrophobic feeling to it too. So you kind of have to calm down from that because there's not a lot there's no air movement. So it feels a little stale. Stifling. Yeah, stifling, that's the word. Um and after a while I did end up relaxing for a while.
SPEAKER_05There were some points where I was like You said that you thought you may have fallen asleep.
SPEAKER_01I well or dozed off, maybe I either that or it was really truly relaxing because when the hour was up, I was in there for a whole hour and I was like, that's it. Like I thought, wow, that really did go by quick. So I don't I could have just I could have gone off into like a really relaxed, you know, trance like state, which is what they say.
SPEAKER_05Do you think it helped in some way?
SPEAKER_01Um I I think I did feel I don't know if it was the salts or just the rest or whatever, because I you know, they I asked about sleeping. Like, do people fall? They said people fall asleep all the time. And so um I asked or or I had you know looked into the salt. The salts are supposed to be very reinvigorated. I I did feel pretty good. Um but you know, I don't know. I don't know.
SPEAKER_05I'd I'd I might I might try it again, but not you think it would help like certain people who might be dealing with certain things that are like if they got in it, they would be, oh my goodness, like blown away.
SPEAKER_01Well for sure.
SPEAKER_05There's so many people that you think it would be most helpful for.
SPEAKER_01I think it's people that um okay, so I'll put it this way, like a hypnotist. Okay. When you go to a hypnotist, there's some people who are very prone to hypnotism. Okay. That their minds are I think I don't know if it's this their minds are able to relax or if their minds are more moldable. It's not a really good, you know. And s and then there are some who are just like, I just am not, I'm just not gonna do this. And so um it's funny because so in college, my I went with my my first roommate came from the city we live we we were coming from, and we we traveled there to college together in that first semester, like the first week or two, I think it was the first week, they were trying to trying to get everybody like introduced to everybody and they had a hypnotist.
SPEAKER_04Yeah.
SPEAKER_01And so I kind of wanted to go up, but I was like, I don't know if I can, you know, do do this. Because I had actually studied hypnotism. I've been reading a book on it, and I had had some success hypnotizing friends, like briefly. Um, and they were always the ones whose minds were a little bit more, I don't know, easygoing. Is that does that make sense? I don't want to say like dumb or anything, but anyways, my roommate he gets called up on stage, and so um he goes up and they the guy does what hypnotists do, he kind of cuts his mic off for a little bit and he's he talks to them for like five or ten minutes, if I remember right. And then he would poke certain people and tell them to walk off the stage. But the majority of them, he had them kind of like fall into this sleep-like state. And then my roommate was one of them who s kept on stayed on the stage, and then they did hilarious stuff, you know, whatever it was that you know. Yeah, yeah, and then like go out in the crowd, and it was really funny, and I can't remember all of it. But afterwards, he was like, he doesn't re I mean he didn't remember any of it, he didn't like it. And if you asked if he remembered any of it, it was almost like the question didn't make sense to him. You know, and so I feel like people like that couldn't just accept that certain treatments just work and it's okay and you can relax. Whereas like my mind is kind of going on stuff like that, like can I trust the blast person that was in this tub to not have been gross or whatever? And that's not fair either, because you know they have showers in there and all that stuff. Like it's anyways, it I think I think it would be good therapy for some. And I've heard like some people just have fantastic like, anyways. So that's floating.

SPEAKER_01My truck radiator burst open on the way home the other day. Yeah, that was weird. I did need to float after that, except I yeah, so Colleen came and picked me up, and that was good because I'd had already had an appointment to drop off the truck at the mechanic that we had for something else for brakes, which I didn't need brakes. So the Lord actually blessed me with having already made an appointment and they found out on the way, anyways. That's that. And then our tractor tire blew, and so I had to bring that to a place, and that's It was a busy week of vehicle stuff.
SPEAKER_05It's been exceptionally hot, so I wonder if that had anything to do with it. Like a lot of hauling and then hot and that's true.
SPEAKER_01I I was towing a lot this week with the tractor and stuff, and and I just got a leak out of the radiator. It's not a new truck either anymore, so it's kind of getting to that point where you think that it's not brand new because you take good care of it. Yeah. But it's such a good truck still. And so the tractor was fun to get fixed too because I brought it to kind of one of these places where some some roughnecks, you know, work. And I used to work around roughnecks and I was in the military, so I kind of missed that. This is another thing that my buddy and I were talking about today on the phone is like there's so many softies in the world today. Like we were talking about like if you're if you're working in a male-dominated industry, like an electrician or or um like you're a grunt out in the field in an electrician, or you're in the military and you're working around hardcore dudes and stuff, like it's just mandatory that you dog on each other. It's just mandatory that men like the older men haze the younger man to make sure that they can take it. And so that's hit like I told him, it's you've gotta do it because like it it's it balances men out. It's the way that God made men. Men need to be rough on each other. And if we're soft on each other, we're just women. Don't be a woman if you're a man. So you need to be rough on each other, right? And that's my opinion. And I loved it. I loved it when I was in the military, super hazed. And I loved it. This one of these last jobs I was in because there was this old guy who was just so rough on me, but because I could take it, he ended up respecting me greatly. He didn't respect anybody. He was mean and he was just impossible to deal with. But because I met him at his level and I didn't dog him back, he was the older guy. And that was the thing. He was allowed to haze me. I wasn't allowed to haze him, and that was understood.
SPEAKER_05And so you guys are good friends now.
SPEAKER_01We are we are, and and he hates everybody, literally hates everybody, and so it's really hard to like get on his good side, and that was just because it was like, it's not gonna bother me when the old man. So I drive up to this tire place for the tractor, and it's just a bunch of roughnecks, and I'm driving the tractor with a flat tire into the bay, and this old man who reminds me of the old guy I used to work with just starts laughing at me. And I'm like, I'm literally a customer about to pay him, and he starts laughing and making fun of me to see, and I could just, I was like, ah, I love this. I love this place. It's not like it and clearly not a place for women. You don't they they don't talk clean, they don't, you know, and I got to talk, I mean, I didn't talk dirty with them or anything, but it like I ended up just laughing with them about me being, I don't know, I guess it was weak because I had a flat tire. I guess literally the place was for flat tires, and he's making fun of me for having one. It wasn't like I like he was running a donut shop, and I was like, Can you fix my flat tire? And he laughs at me. No, it's a tire shop.
SPEAKER_05Or you go to some like dealership or something.
SPEAKER_01No, it was a tire shop, and he's making fun of me for having a flat tire. So he made fun of me for a little bit, didn't know my name or anything. Doesn't matter, and I loved it. Oh, I loved it. I was like, I'm coming back to this place. So reminded me of being in the military, reminded me of being, you know, just all just guys old men who are rough, and there's too many soft young men who like need to be coddled, and I just think we need to just, you know, just be mean to each other. Okay. Anyways, so silly. Uh, so maybe that's just the older way of thinking about it now. Sometimes just you gotta you gotta figure out how to take it before you can know if you can really like when things actually get hard and you're not just in a workplace. Sure. And can't can't you been have you been hardened up enough to take it? So anyways, that's why I treat my son so terribly.
SPEAKER_05No, you don't. Stop it. Stop it.
SPEAKER_01You want to tell him about going to the twelfth best pizza place in the world?
SPEAKER_05I don't know if I can talk about it yet.
SPEAKER_01Oh, you haven't.
SPEAKER_05Because I want to go again.
SPEAKER_01Do it, tell tell them all about it.
SPEAKER_05It's so peculiar because this place is literally the twelfth best pizza place in the world. The world? Yeah, that's right. No, no, no.
SPEAKER_01Sorry. This year this this was the twelfth best in America.
SPEAKER_05In America.
SPEAKER_01But because they're he he said that the top twelve get on the next list of the world.
SPEAKER_05And that includes like Italy. This was the top fifty people. I know that that makes sense to everybody. I just want to bring it up. Okay, in America. And when we had our tenth anniversary many, many years ago, we went to a place in New York City that is currently ranked sixth. And it was like we talk about it all the time. Yeah, still talking about it. It's incredible pizza.
SPEAKER_01One of the best experiences. We always just amazing. And it was a random like experience for us. We were like, we gotta try one pizza place when we're gonna go.
SPEAKER_05We just wanted a pizza in New York City. We just happened to walk into one of the best. And then we're like, anyway, and it was out of this world.
SPEAKER_01Called Don Antonio's.
SPEAKER_05Oh, so good. Anyways, so this place is number 12.
SPEAKER_01This place that's near us.
SPEAKER_05That's near us. And you and I had gone a couple years ago, like they just opened and two or three years ago. Yeah. And uh loved it.
SPEAKER_01Yeah.
SPEAKER_05And it was a trek out there, and because they were new, the way that we had to get out there was like through neighborhoods and like weird traffic, and so we were have not been able to go back out there because they are only open like a couple of days a week, of course, and we're busy. And so we want to keep taking the kids because we keep talking about it. Well, Friday you had to teleport because they were doing HVAC in your building. And uh we said, Hey, we can I don't have to wait for you to come home. We've got the forty or fifty minutes that it takes to drive out there, you want to take the kids. And so it worked out, and so we were able to take the kids, and it's as good as remembered, and they are just incredible. It's called Valentina's. I was getting this build-up Leading Into the I don't know. But yeah, Valentina's Pizzeria, pizza and wine bar, I think is the official title.
SPEAKER_01Is it really?
SPEAKER_05I don't know. Yeah, I think so.
SPEAKER_01I thought it was Valentina's cool.
SPEAKER_05Anyway, he's out of New York City and he came here to Madison.
SPEAKER_01It's a Long Islander.
SPEAKER_05Long Islander?
SPEAKER_01I think so. I I say that and I could anyways go ahead.
SPEAKER_05Really neat. He walks around the restaurant, makes sure that everything is in tip-top shape, and then his daughter, Valentina, that it's named after, was actually sitting next to us.
SPEAKER_01And we didn't even know it the whole time. So his parents and his daughter, who's in the picture, were literally sitting next to us the whole time. Like the royalty was there. Yeah. And it's neat because the guy, his name's Joe Carlucci, I think. He is like a super conservative dude and like unapologetic. But he's from New York, and I wonder if like he didn't end up down here because New York is such a stifling pig style of liberalism, you know.
SPEAKER_05And so I'm so glad he's here. I don't even think.
SPEAKER_01Yeah, so he came down here and just I I don't know the story. He actually had a book. I should have bought it while we're talking about it.
SPEAKER_05I know, I was thinking about that. I was like, I want the book.
SPEAKER_01It's at the front counter. It's called Slicing Through Adversity or something like that. It was slicing through something. Yeah, I want the book. Obviously. Well, even down here, he's made the news with quote controversy because he's like put you know something semi uh conservative on his pizza boxes, and then some liberal doof will like complain and it makes the news. And it's like, well, that's not even that controversial, like whatever he's saying. And so um it makes me like him more that he stands up for his good principles. But um best pizza. I'm telling you.
SPEAKER_05And the dessert. We did, we don't normally get dessert, but we got terramisu and cheesecake, and it was like licking unashamedly the plate.
SPEAKER_01They make their own desserts in house. They don't have a dessert menu, it's just whatever they had that night. But on that, so the that same group that rates the top 50 pizzas in America does best dessert uh dessert. What is it? Best dessert. Best dessert.
SPEAKER_05I think it's just best dessert.
SPEAKER_01It's not single desserts, they're best desserts. Right. And they made number one. Yeah. So they only have one. Well, whoever makes the best desserts and Valentina's does it.
SPEAKER_05Yeah, easily the best. So we're gonna go back tomorrow.
SPEAKER_01Oh my goodness, the cheesecake was so good. Holy cow! So good, so good. But anyways. Ah, siep. We got we had the 12th best pizza here here in Alabama.
SPEAKER_05But uh yeah, and we didn't have to go through the neighborhood this time around, so that was nice.
SPEAKER_01Yeah, we got we took a different route and it was so enjoyable. We just went through the country. This place is literally, it's not in a city, it's literally across from farmland. I mean I mean acres and acres of farmland.
SPEAKER_05Plaza almost.
SPEAKER_01Yeah.
SPEAKER_05Like it's sheer, I don't know. It doesn't look like a restaurant, you know what I mean?
SPEAKER_01Like it's not like restauranty or it's not fancy until you go inside, and even then it's not like when I say fancy, I don't mean like dress up fancy. But it's so the atmosphere is so good. They work, they're his team works incredibly well. Everybody's doing something. The food, you know, usually you make a pizza or you order a pizza, and it takes a little while and all that, and it took a second, but like we had garlic bread and go, my goodness, the garlic bread.
SPEAKER_05Yeah.
SPEAKER_01I mean, outstanding. So good. And then the pizza came out really timely, and I mean the place was packed. You know, ever since they've gotten that award, it's even gotten more packed. But they were everybody was so everybody was friendly. It's not just like your waiter, he's working for a tip or whatever. It's like, man, everybody was there. And and the owner, Joe Carly, he is literally walking around the whole time. He's busting tables. So when you see the owner busing tables and he's moving stuff around, he's making sure people are getting water and all that. And he's not like going to you know how owners a lot of times will will go to tables, be like, How was your meal? Like when he's trying to strike up, he's not doing that. He's letting people eat and busy, he's actually wanting to make sure everybody's experience is top-notch. So I'd like to meet him someday and talk to him. I really wanted to be like his drive. Yeah, yeah. But it's so neat to see him because he's like we see pictures of him all the time and hear stories about him, and we're like, oh, there's that celebrity, you know. So, anyways.
SPEAKER_05Okay, so we gotta get to my question, Corner, because I think this podcast is gonna go along.
SPEAKER_02Okay.
SPEAKER_05Okay. So we had a listener ask me to talk about one of my most favorite things, and I didn't have to do any prep because I think about this, I don't know, all the time. Okay. Okay. So before I get into my answer, I want to know what is one of your no, not one, what is your favorite thing? Your favorite meal that I cook that is healthy. Part one. Part two, what makes it healthy eating?
SPEAKER_01What is my favorite meal?
SPEAKER_05Mm-hmm. What would you consider, you know, like healthy eating, something I make?
SPEAKER_01This is hard to answer.
SPEAKER_05I know.
SPEAKER_01So Colleen is an incredible cook, and I'm and I'm not just saying that. I think everybody who has eaten your food and and experienced your cooking would agree with me, but um, you cook, you don't have any kind of signature dish. So, what is my favorite meal that you cook that is healthy to start? That's that's part one. And you're kind of smiling at me like I should know something.
SPEAKER_05No, I just I'm trying not to answer my own question.
SPEAKER_01I think that one of the first ones that that that tops my list is I love your pepperoncini roast that you do, that you also will do um carrots and potatoes and olive oil in the oven. And that's kind of the side um dish. I think that's one of my favorites. I also like when you do that, it's what is it like? It's not a pot pie, it's like a but it's a potato dish, but it's got all the veggies and meats and stuff in it with a little bit of a crust. I don't know if that would be considered perfectly healthy, but the other is like tonight Colleen did a completely from our garden. She did all these vegetables and and delicious, I mean, just absolutely delicious. And the only thing that didn't come from our land was a treat so sausage, right? Correct. And so did that and topped it with an o an over-easy egg, over easy fried egg, and the juices ran down. Oh man, it was just this beautiful dish. And so that's really good. My other favorite one that you do for me that's perfectly healthy is steak and eggs.
SPEAKER_05Yeah.
SPEAKER_01Like I like a steak that's cooked in butter with a little bit of salt and pepper on it, and uh and a couple of over-easy eggs, and that's it. You know, anything that's carnivore, that's just meat, that's just butter, oh, I mean, so good. And it's so good for you. People like the medical system has it wrong. So eating like eating good butters and good fats and all that stuff will cause you to lose weight super quick if that's what you eat, really all you eat. But, anyways, is I'm gonna go with my top of my list that came to the top is roast, roast with the pepperoncini. Okay. Did I answer that wrong? Oh, what was the second part of that question?
SPEAKER_05So what do you I mean you said in wine? Yeah, what do you think is like healthy? You know, like when I say I want to do it. About that dish or about yeah, I want if if I were to ask you, like, is this healthy for you? Like, what constitutes that like healthy eating?
SPEAKER_01Yeah, um, well, there would be no seed oils in the dish, there would be no uh preservatives added that like like topping type stuff that would be preservative laden, nothing with chemicals in it. Um the fact that like the roast, let's talk, let's just go with the roast. The roast um has been has been cooking in broth. So you put a broth in there, often our own broth that you've done. And the prepper machine's of course are just peppers, but um that's really it, and then salt and pepper for those, and then you will typically baste the those vegetables I was talking about in the oven in a little olive oil, which I think is really good for you. And um, so I that's what I would consider why it's and anything that's from the land, so anything that we pull out of the garden obviously is really good. No pesticides, none of that, no herbicides, all that. Um so anything fresh, as fresh as possible, and yeah, I mean anything that has just n no additives in it, no anti you know, yeah, no antibiotics into the animals, all that stuff. Just eat meat and vegetables and yeah.
SPEAKER_05So I actually had like of course this is this is my happy place, is like I dream about recipes. I I really do. And I'm like, ooh, I think I should make this, and I love to cook. Like it just makes me so happy. You can tell. Yeah, all that love. But um, I have a never list, and you mentioned already uh seed oils. Okay, and I think that we have kind of um explored how to eat better. Just I don't know, like we feel bad or we f want to feel better. It's not also like we always felt bad, but like how do we make it even better than what it is? And so I think that we've just kind of explored this and God has led us down a lot of into a lot of people's lives who have challenged us and with our thinking, and we we're we like to learn about these things, but so I have like when I consider healthy eating, I don't necessarily think about um something restrictive, you know. Like I was talking to this lady once and she was asking me about um herbs or something, and she wasn't feeling well. And so I said, Well, um, I shouldn't have used this word because this is such a trigger for most people. I said, Well, what what's your diet like? And she heard restriction and sh and I she turned right off. And I was what I was meaning was, what kind of food do you eat? Because a lot of times the foods that we eat contribute heavily onto how we feel. And so I've learned not to use the word diet. But you mentioned um fresh and from our garden and as close to that as possible. Um, and one of the things that I I like to say, this I got from uh Warty Harmon. She works with a traditional cooking school, and she is such an encouraging person and so understanding in every people's um spot in life. But she says that we eat God's way, and I like the way that she puts it because it's not you know the set of rules of like you have to eat organic food and it has to be this way or that way. We just eat, I cook this way, we eat this way to say thank you, Lord, to give him the glory and honor, his creation, by embracing and trusting the foods that he designed for our nourishment. So it's not about oh, you you can never have sugar, and people are like, oh, you know, you just eliminate sweets, but God made like your ability to taste something sweet, and we've turned it into just this terrible distortion of that taste bud. And it's like that's all anybody wants to taste anymore, is like sweet, you know, sugar's just in everything, and we've got to turn that around and be able to explore all of the taste buds that God has given us. Salt and bitter. People are very turned off by bitter, but like that's a real taste bud. You should be tasting bitter things. And so I think that healthy eating has got to be going back to what God has designed it to be for our nourishment, and you're gonna find blessing in that. You're gonna find not satisfaction, but um oh, what's the word? Like I'm tired all of a sudden. Um, like you're you're fulfilled, you know, just like with everything, you know, when you do it God's way and you find fulfillment, you're like somehow surprised that like that worked. But um, eating is not anything different. Healthy eating is not anything different. And so, you know, you just think about the ingredients that are in front of you. Can you pronounce them? Don't put them in your mouth. Like if you can't trace back where they came from, like if you had a really busy day and you just want to go to the grocery store and you need something prepared, and we've been in that position a couple of times, go in the grocery store and look at the prepared things, but like look at them with open eyes of like, okay, can I at least trace these ingredients? And if no, just choose just anything else, you know, just choose wisely. Choose like something five ingredients or less. Make sure that you can pronounce them. Don't do seed oils, don't do GMOs, don't do anything with dyes or even natural flavors, those are just dyes with fancy sounding names. No sweeteners, you know, like um when you see no sugar or zero sugar, those are chemicals. You mentioned chemicals as part of your healthy eating. Um if you want something sweet, just eat sugar. God made sugar, just eat sugar. Um and then of course, when I think about eating healthy, um, I always like to mention don't forget about your skin, because that's the only organ in your body that can't circulate. So like fragrances and um, you know, those downy unstoppables, those things are terrible for you. Candles and all these kinds of things. And so when you think about how you're eating healthy, these are just kind of my my go tos for where I go from I want to eat better, I want to feel better. So just these are my my my no no nevers.
SPEAKER_01Yeah, and I think it's important for everyone to hear also that it's back to you said something about the lady herd restrictive, and so when you say all. Of this, this is like the baseline, what is important, but we understand that it's not always possible. And and I think ultimately that the goal is to know like, look, if you're worrying, if you're stressed about it all the time, like if you're stressing about you know finding the right foods or whatever, that's worse for you than if you just got some a little something and did your best. And you know, eating organic or is not always possible for people in the budget, you know.
SPEAKER_05So you it's not always possible for us either. Uh-uh.
SPEAKER_01No, not at all.
SPEAKER_05Which is why we grow a lot of it.
SPEAKER_01You do your best and you you know, you give God the rest. And um, so it's important like I was talking about losing weight, like when when you talk about losing 30 pounds or s or whatever, people think you just didn't you just ate perfectly. And that's not really true. I didn't I just thought about it more. And like like tonight I had a couple of um little bites of ice cream. And it was to us, it's I mean, it was ice cream with real sugar in it. So it's not, you know, and it's got real fruits, it's got de it's got good like ingredients that we could identify.
SPEAKER_05Right, that's what I'm saying.
SPEAKER_01Like, so we identify the ingredients, but like I haven't had ice cream since when. Uh-huh. Right? So it's it's not like so you don't be so restricted that it's just so unhappy, and you know, it's like this, you know, and um, and so I think that's really good. Like you people a lot of people just don't know like why avoid seed oils or or why avoid fragrances, you know, these are the things that we are have researched and others should too. It's not we don't have time to go down that road, right?
SPEAKER_05But yeah, I just you know, it's like choices, like if you want to have ice cream, like you can have ice cream, but don't eat a gallon of ice cream. Like a couple of bites of ice cream, of a good ice cream, like that's good. It should satisfy.
SPEAKER_01Look on look on the ingredients too. Like that's one of the main things we do. When we're when we're at a store, we don't know the product. We just look at the ingredients and like the kids will now, and they'll be like, ooh, there's whatever in the Yeah, they're like, what does this even mean? Or there'll be like ice cream should have what? I mean, a handful of ingredients.
SPEAKER_05Yeah, if you've never made your own ice cream, like you should be like, yeah, it's five like.
SPEAKER_01So if there's forty ingredients and something that you're like, wait, why? Then that's a big obvious red flag. You know? Yeah. So and I think a lot of the public has woken up in the past few years to all this stuff. I think there's so much good education about you know, pr eating eating proteins that were supposedly bad for you before, and now we're just eating butter and you know, meats and bacon and people are losing weight, and and then and and and then we're going down the dyes, the dyes have come out as so you know how terrible they are for uh everybody. And so I think education's great.
SPEAKER_05Yeah, absolutely. Um another thing, and maybe we need to do a part two. I told you this is like my happy place.
SPEAKER_01This is your happy place. Um and if you ate in this household, it'd be your happy place too. I'll tell you that much.
SPEAKER_05Um thank you. Uh that's really important to me. You know, you you bring up if you eat here, like I want people to come in and go, I'm going to be nourished, you know, and and food is just such a beautiful way to to show God's love, you know. I mean, people eat around the table. You you commune around the table, you I don't know. There's so much that happens around the table, and so when you eat one of my meals, you should know that all every single ingredient is for your nourishment in some way, you know, and I think that that is is kind of what you are able to now give to whomever you're feeding. Is uh it's not that I just I care for you and maybe you don't care for them, but they should still feel nourished in some way, and you can do that a lot through your food. Um, and it doesn't honestly take me that long. Um, if you reevaluate your time, like if I have to cut carrots for the roast that you like, I can cut three bags of carrots and then I can store some in the freezer, I can store some for later on that week, I can meal plan ahead of time going, okay, I'm gonna use carrots on Monday, but we use a lot of carrots, so I'll just cut up all the carrots that I need and I can section them off, and then I'm not spending more time in the kitchen, I'm just spending an extra two minutes, and it really doesn't take that much longer. You just kind of have to plan ahead. So, like my bread takes me 10 minutes at night and 10 minutes in the morning, and then it bakes for 17 minutes, and we have fresh bread every single day, and it really is just getting into the habit of doing that. And so when you are when you are home and you know you're gonna be home, there are certain times where I'll have all the crock pots going and all the instant pots going. Because when we did travel ball and we have one on one side of the city, another one on the other side of the city, and one in practice and one in you know a game and a doubleheader and all this stuff, you're you can't be in the kitchen. Like you you just aren't there, and so having carrots already cut up to where your prep is done because you spent one day doing it, you can get your kids involved. We had them several weeks prior to like the baseball season, where I said everybody eats and everybody cooks. And so everybody was in the kitchen. We were batch cooking muffins and breads and um roasts and shredding chicken and you know, deboning and making broths because you can add broth to just any sauce and all of a sudden it's a nourishment. So just having access to all those things all at once, and it really doesn't take that long. You think it does, but once you're in it and you get into that habit and you know, it really doesn't take as long as you think it does.
SPEAKER_01I'm thinking ahead.
SPEAKER_05Yeah. But yeah, that pepperoncini roast, if you need the recipe, maybe just email us.

SPEAKER_05Yeah, no, that's that one's so easy.
SPEAKER_01Did you have did you th did you think that you had a guess at what I was gonna say?
SPEAKER_05No, I just I was curious. Like and so on.
SPEAKER_01That's a really hard question to answer. Yeah. Because even your homemade pizza I would consider good for you. Oh yeah. You know, because you do, you know, homemade sourdough and all that stuff, so which is why we don't have it very often because I have to It's a lot of work.
SPEAKER_05Well, there's a lot of people, and I can only make so much out of my starter because I only have one jar right now of my starter, and I need to advance it to a crock pot or not a crock pot, but a croc. So I can't. It's a bunch of croc. It's a bunch of croc. To not have so much so I can make pizza.
SPEAKER_01Yeah, so that's a good question, and and if we need to do a part two, we'll do a part two and see if you hear back from folks that want to hear more on that. Yeah.
SPEAKER_05And I've got like menus from years and years and years that I kind of go back to.
SPEAKER_01Yeah, and if you haven't noticed, our format for this season has been to, you know, introduce the week and any kind of funny stories or what's been going on with us. But our main topic is Colleen is coming up with a question and I don't know it, and that's been fun to do.
