Inspired by the drama of Mahler’s Symphony No. 6 — the soaring melodies, the hammer blows, the hero’s fate — we’re cooking dishes that hit with the same bold intensity.

First up: classic Italian BRACIOLA, rolled tight with herbs and cheese, then simmered low and slow until it’s tender enough to make you forget your troubles. It’s rich, emotional, and just a little bit epic… very Mahler.

Then we balance the drama with something bright and heavenly: burrata & roasted tomato BRUSCHETTA. Creamy burrata (hello, cowbells!) meets blistered tomatoes, garlic, and basil on toasted bread. One bite and you get that perfect mix of light and dark — just like the symphony.

Hey hey, have you ever heard of bracciole or bracciola, singular plural? So it's an Italian uh basically a roll of beef where you're taking a top round or a flank steak and you're filling it with really awesome things and rolling it up and then making a quick tomato sauce and then it simmers in there. How does that sound? Okay, so this Saturday, April 18, 2026. Um I don't know if you've seen this before, where I'm helping to promote Orchestra Iowa, the local um orchestra that is phenomenal. They've got, I don't know what percentage of it, but a lot of players that uh play in other out-of-state um symphonies, including CSO, Chicago Symphony Orchestra. So it is led by Maestro Tim Hankovich, it is a phenomenal um orchestra. So anyway, that is here in our home of Cedar Rapids. And Tim is coming over to my house and we are gonna cook and we're gonna promote Mahler 6, which is coming next month in May, uh, the weekend of May 15th at the Paramount Theater downtown. So if you're you live in the area, if you're listening to this and you're in anywhere near Cedar Rapids, uh put that on your calendar. Put this Saturday and the weekend of May. There's Enzo uh is this weeking, um, May, May 15, 16 weekend for Moller 6. Anyway, um Tim's coming over. We're gonna talk about music. We're going to cook. So we're gonna make the bracola bracciole, and we're also gonna make uh brushera with oh, it's gonna be so good. Um, with roasted tomatoes and burrata, and of course some basil and amazing balsamic and extra virgin olive oil. So if you are free on Saturday night, 5 30 p.m. Central time, we are gonna actually cook live on Facebook. So in the comments here or in the notes, I will put the link. And if you can't watch it live, it'll you know it'll be there on my feed, but I'll also upload it to my YouTube if you don't do social media, and you can watch it there after the fact. But we are gonna cook live, and if you would like to join us, that would be amazing. Um, I've got lots of people emailing me for the grocery list. So you'll probably want to do that soon uh so that you're all ready to go. And I'll email you that grocery list and the list of just small gadgets that you need to get your kitchen all set up, and then uh later in the week I'll send out the recipes so that you can read those ahead of time. And it's actually not a huge grocery list, so it's not um shouldn't be too expensive of a meal. Um it does take it'll take about an hour to cook um that brocciole in uh in the tomato sauce. Um but we'll eat the brushketa uh real time because we're gonna be really hungry smelling all this good stuff, so um, and we'll have some beautiful red wine and I don't know what else.
