Hello everyone. This is your host, Austin Bellino, and I am thrilled to have you join me on this new adventure. So fire up the grills and get ready for a sizzling adventure because today we're diving into the mouthwatering world of barbecue (BBQ). But before we get started, let's take a moment to share some simple details about the 4th of July, a day filled with fireworks, by far my favorite part.

[00:01:00] Parades fun and of course delicious barbecue gatherings with family and friends. On this day, you'll find Americans firing up their grills, creating a mouthwatering spread of smoked ribs, juicy burgers. Hot dogs, chicken and other meats, all slathered with their favorite barbecue sauce. It's a celebration of flavors that embodies the spirit of American outdoor cooking.

Now let's travel the globe and explore how different countries celebrate the joy of barbecue. Throughout this podcast episode, we'll meet passionate guests from South Africa. Indonesia, China and Brazil, who will share their unique barbecue stories, techniques, or culture. So whether you're a seasoned grill master or a barbecue enthusiast, get ready for a smoky, sizzling and saucy journey that will leave you craving more.

[00:02:00] First stop South Africa. I am Laalaa from South Africa. We call BBQ over here, Brai it is usually in summer., they'll be someone who invite other people over for Brai or people will just put together money and have, you know, buy the meat and have the Brai either usually at home or at the park. There'll be like pap on the side, and Chakalaka are usually prepared by, women.

And then the guys will be Braaing, uh, the meats with, uh, mood and charcoal. there's usually pork, like all types of meat, pork, beef, uh, whatever. And with as well, there'll be like, drinks for the kids and also some few beers and wine for the adults. Yeah, and then, people sit down together, eat, and have fun.

[00:03:00] Hi, so first of all, I would love to introduce myself. My name is Diny and I'm from Indonesia. Indonesia is a country in Southeast Asia. We're near to Malaysia and Singapore. I'm actually really excited to. Share about it. And today I'm gonna be talking about, Indonesian barbecue, which is I Ayam Bakar. I believe it's the most popular type of barbecue in my country.

And it's just so popular that you can find it like, everywhere I Ayam Bakar means Ayam means chicken and Bakar means the process of the cooking, it's either grilled or barbecued. Well, it's a it's a cooking process with charcoal that is what Bakar is and it's a like a go-to for, for some people because it always tastes like the way it always tastes.

[00:04:00] So some people would just go with Ayam Bakar when they don't dunno what to eat. Cuz you know, I'm bakar would always taste good. And it's hard to make bad Ayam Bakar unless, unless it's burned and Ayam Bakar tastes sweet and savory at the same time. It's because we braise them first before like we cook it, I mean, before we grill or like barbecue it with some spices like garlic, shallot, ginger, coriander, and other spices like salt and pepper and so on.

Then we barbecue it over charcoals and while we cook it, we, we base it with a mixture of oil and Indonesian sweet toy sauces. And once it's ready, we usually eat it with rice and some other side dishes like vegetables such as cucumber, basil, and long beans, eggplants as well. And Samal. Samal is indonesian chili sauce. 

[00:05:00] Hello. I'm Alan Gomes, and I live in Brazil in the Metropolitan region of Rio de Janeiro. The barbecue here is not the same as the barbecue in all the other Brazilian states. Depending on the region, you'll find different ways of making barbecue. Here we usually grill the meat on the grill. We cut the meat into small pieces and season them before grilling the meat we use are Picanha (Top Sirloin cap) ribs pork, chicken hearts and other cuts of beef. We also usually grill other things like a garlic bread. For the garlic bread. We make a garlic paste and stuff it before putting it on the grill. Our barbecue grill is an iron grate and we use charcoal. It's not common here to use an electric grill.

[00:06:00] Along with the barbecue, we eat a side dish, which is usually at least rice and farofa, toasted cassava flour. We can also have Salpicao, chicken, salad, mayonnaise, and sauce, and to finish, we also drink soda or beer. Barbecue is the most common type of gathering we get together, talk and spend the hours enjoying each other's company.

Hi everyone. I'm Lou. I come from China. A lot of Chinese people like eating barbecue. So today I'm gonna talk about barbecue. When we mention barbecue, we usually will think of sticks of fresh beefs and lambs. Over charcoals for greeting. We would usually put about several pieces of them, add some cumin and pepper to make our tongues filled with a bit of and didactic chalk.

It could turn back the clock and start over bringing you the unique sense of true love. You can also drink [00:07:00] some beers to make you feel more excited. There are some seafoods as well, like abalone. It's extremely tender. It's scrumptious. You will like to eat it again, again after seeing it. And there are some vegetables as well, like potatoes. So I hope you enjoy it. 

And that brings us to the end of our sizzling journey through barbecue traditions around the world. We traveled to South Africa, Brazil, Indonesia, and China.
