Healing Thyroid Cancer with a Plant-Based Diet: Dr. Ruby’s Journey and Tips for Overcoming Cheese Addiction
I had the pleasure of speaking with Dr. Ruby Lathon on the Plant Based Curious podcast. Dr. Ruby is a holistic nutritionist who healed herself of thyroid cancer through a plant-based diet. She shares her journey towards a healthier lifestyle and how she overcame her cheese addiction, which is one of the biggest obstacles for people transitioning to a plant-based diet.
We discuss the importance of understanding why you're making the change and finding good replacements for your favorite foods. Dr. Ruby shares how she learned to make delicious cashew cheese and other plant-based alternatives to her favorite foods. We also talk about the documentary "What the Health" and how it's important to educate yourself about the science behind a plant-based diet. Her food delivery service, Ruby Red Vegan, offers organic, plant-based meals in the DC, Maryland, Virginia area, and she shares tips on how to veganize your favorite recipes.
