Can I just say, my takeaway from this episode was I really just wanted take away after talking to Matt Kershaw? Matt is the Executive Chef of The Other Bird restaurant group. He has a deep passion for creative cooking that has been featured on a variety of reality cooking shows including Chopped Canada and Fire Masters.  

In this episode, Matt serves up some hard truths about the challenges the restaurant industry is currently facing as well as shines as he talks about his love for creating new dishes and the self expression that every chef wants to plate up for us.
