Episode 0: Welcome to OYSTER-ology

[00:00:00]

Hey folks, this is Kevin Cox and I'm so excited to introduce this new podcast that I'm launching called OYSTER-ology. It's a podcast all about oysters, aquaculture, and everything from spat to shuck. OYSTER-ology is a gathering place where oyster farmers, shuckers, scientists, writers, restaurateurs, environmental activists, and aquaculturists from the widely fragmented world of oysters can converge to share knowledge and experiences related to oysters.

Each episode will feature an interview with an expert or industry professional, creating a dynamic and accessible hub for all things Oyster related. We'll dive into this watery world with those who know best -- the people doing it every day. And through lively, unfiltered and sometimes crazy conversations, and the occasional field trip, we'll learn about their stories, their challenges and even their failures.

I've got a lineup of amazing guests on topics that will cover everything you can think of in the oyster and aquaculture world. For those in the business, it's a great chance to learn what others are doing in today's oyster industry, and maybe make some new contacts and friends. And for you millions of eaters out there who love to slurp oysters or just want to feel like experts at the raw bar, this is the podcast for you, too.

I'm your OYSTER-ology host Kevin Cox and I've been studying oyster aquaculture for a long time I've been eating oysters for decades, too. Yep. I've slurped sauteed steamed and scorched more of these little shellfish dinosaurs that I could ever even count and I've cut myself on at least three or four continents shucking them That's because for more than 15 years. I've been traveling the world as The Foodwalker, exploring food on a local level and sharing it with readers and listeners. And now I'm diving into the oyster world to learn all I can about these incredible creatures that are both environmentally crucial and you know Ridiculously delicious.

I'm even starting to grow my own oysters, turning the lessons I'm learning here into real experiences. So with every tragedy and miracle I'll have on my little farm, I'll learn a little bit more and I'll share it with you.

This is just an introduction to OYSTER-ology, which I'm calling episode zero, which is to say it's not really an episode at all, but it'll give you a placeholder for actual episodes when they drop soon, that way you'll have them waiting for you after you've forgotten all about this little introduction today.

So to see the good, the bad, and the ugly of this bivalve world, follow OYSTER-ology on your favorite podcast platform as we shuck open the shell and look inside. It isn't always pretty, but it's always interesting.
