I have always loved working in the food industry, server, bartender, and restaurant business. Growing up on a large farm in the Midwest has given me inspiration to help others learn how to eat wisely and how to spend money sensibly on food. Currently I have a full time job working with children and a busy schedule. I enjoy doing this on the side, to help anyone find an ease in cooking. 

I feel Iโ€™m relatable when it comes to all the above on what most of us are looking for in life.

This week we are making Pesto Grilled Chicken Breast ๐Ÿ“

This is a quick and easy healthy sandwich!!

Here's the recipe incorporating the ingredients & instructions:

Ingredients:

- buy fresh from a local farmer ๐Ÿšœwhenever you can

- Swiss or Provolone Cheese
- 1 jar of pesto or homemade pesto

- 1 large tomato

- 2 chicken breasts that are local farm raised 

- 4 slices of seed bread

- Organic Mayonnaise (if you choose) or Unsalted butter

Instructions:

1. Heat Grill to 300 (use a panini maker or an outdoor grill)

2. Rinse and pat dry each breast

3. Lay on gril, only flip 1x if on grill - Internal Temp 165ยฐF

4. Slice Tomato to your liking  

5. Prepare Pesto

6. If you are using bread, toast each slice

7. Slice each breast Horizontally in ยฝ, end to end

8. Lay flat side up  on plate or bread, spread mayo and pesto on top, add sliced tomato, cover with cheese 

9. I put mine into the air fryer just until the cheese melted a little
