MY WHY:

I have always loved working in the food industry, server, bartender, and restaurant business. Growing up on a large farm in the Midwest has given me inspiration to help others learn how to eat wisely and how to spend money sensibly on food. With a full-time job and kids, I feel I’m relatable when it comes to all the above on what most of us are looking for in life.

Ingrediants:

  • Nice cut of your favorite steak or roast or goat or lamb
  • Broth (I used my homemade broth 1 qt jar, season 2:Episode 6)
  • Tbl oil
  • Red or White Onion diced
  • Chilies - I use green or hatch
  • Garlic cloves; minced or diced
  • Seasonings; cloves, oregano (fresh), cumin, rosemary (fresh), salt & pepper, cilantro (fresh)
  • Fresh limes for juicing
  • If you want to add diced carrots or jalapeños feel free to add here
  • Tapatio cups of ramen (I choose beef for this but you can choose your own flavor). You can make your own ramen noodles too or plain non-carb ramen noodles.
  • Eggs soft boiled (inside slightly runny) *wait 30 minutes prior to meat is done to make*

Instructions:

  • Marinade your meat in the mix from all your ingredients above. If you. need to add some water a few cups is fine. Let sit out for 2 hours.
  • Heat oil in cast iron skillet, sear both sides of your choice of meat
  • Now move your meat to your roaster or slow cooker
  • Pour all your liquid marinating mix into the slow cooker
  • Set for 4-8 hours (the longer the better)
  • When finished the meat will fall apart, stir, and scoop into your ramen (add packet if you would like).
  • Top with your eggs, green onions, Oaxaca cheese
