MY WHY:

I have always loved working in the food industry, server, bartender, and restaurant business. Growing up on a large farm in the Midwest has given me inspiration to help others learn how to eat wisely and how to spend money sensibly on food. With a full-time job and kids, I feel I’m relatable when it comes to all the above on what most of us are looking for in life. 

WE ARE MAKING: Eggplant Express 🍆

Ingrediants:

• 1 small eggplant  🍆
• Salt
• Blue Cheese, crumbles
• 1 egg, soft boiled or not
• Sun Dried Tomatoes
• Garlic Fresh
• Mushrooms

Instructions:

• Slice the washed eggplant into 1/2in slices
• Add salt to both sides of each slice
• Set aside to allow releasing of moisture
• Mix up your toppings in a bowl while you wait 
• Pat dry on both sides with a paper towel
• Bake 350, 10 minutes alone for extra crisp 
• Add ingredients to the top of your eggplant slices
• Bake 350, 10 -20 minutes allowing toppings to bake
• Let cool and enjoy!
