MY WHY:

I have always loved working in the food industry, server, bartender, and restaurant business. Growing up on a large farm in the Midwest has given me inspiration to help others learn how to eat wisely and how to spend money sensibly on food. With a full-time job and kids, I feel I’m relatable when it comes to all the above on what most of us are looking for in life. 

WE ARE MAKING: SMASHED Stuffed Potatoes 🍠

Ingrediants:

• 12 small yellow potatoes
• 1 cupcake/brownie pan
• Olive Oil & Salt
• Cheese, shredded of your choice
• 2-3 Full Size Carrots
• 3 Broccoli Crowns
• 1 Onion/Shallot

Instructions:

• Lay potatoes individually in pan
• Poke Holes in using a fork, Oil & Salt Up then Bake on 350
• Steam your veggies, then mash them up 
• When potatoes are soft, smash with bottom of cup
• Add the mashed veggies, sprinkle with cheese
• Broil on low until cheese is melted and desired color
• Add a dollop of sour cream  
• Enjoy!
