Cook the Mountain – In the kitchen with Norbert Niederkofler
Welcome to the third episode of "Learning from Legends," the inspirational podcast with and about people who have made it to the top in their profession. This podcast is brought to you by The TUM Campus Heilbronn gGmbH.
Our guest today is one of only 140 chefs globally to have earned three Michelin Stars and one of only 33 who have been awarded an additional green star for their way of creating exceptionally tasteful experiences – Norbert Niederkofler from Bruneck in South Tyrol.
Norbert is not only one of the world’s leading chefs. He is also a philosopher, an artisan, an artist and a bit of a sustainable rebel in the kitchen. His 16 years of travelling the world gained him international experience and shaped his technical skills. Coming back to his home in South Tyrol, he started to look differently at the way he and his entire profession were doing things. Cook the Mountain was born from his desire to move away from globalized ingredients and instead use what the beautiful nature around him had in stock. In his restaurants he and his team which he calls family showcase the beauty of Alpine products such as native vegetables, herbs, and meat, all sustainably sourced from local producers.
In his conversation with Robinson Nyotta from Kenya, student at the TUM Campus Heilbronn, Norbert unveils some of his secret recipes for turning a passion into a successful and sustainable business.
