Howdy y'all. Welcome to Brewhouse BS. I am owner and head brewer Andrew Goens here with the infamous Chef Gandhi. Chef Gandhi. Hmm. Yes, it is episode 14. 14. Week 15? Shit, dude. It's like week 30? It's like week 20. Oh. That's okay. That's alright. That's fine. We are back on the porch. It just beautiful day. It is such a beautiful day. It it'd be like that sometimes. It'd be like that. Back here on the porch, here to talk some shop. So let's get straight into it. What this is Al Jabira reporting on the middle yeast. Now, let's see. What do we got? What's going on? What am I what am I doing this? What are you doing? What am I doing? That's a lot of paper. A lot of paper. A lot of notes. I'm very busy. Yeah. We have stubbies this week. We have some downtown browns that are ready to go. We have some hop arounds that are in the fridge ready to go. And we are going to be bottling the new and improved cold beer this Wednesday. So Wednesday evening, we will have the new and improved cold beer. Speaking of that, this particular cold beer, I'm very, very happy with it. It's the best tasting cold beer that I can recall in a long time. The few adjustments that I made, raising the IBU slightly, using only German hops, has really done wonders for this recipe. The beer is much crisper, and it just has that super satisfying drinkable quality. I'm very, very happy with it. So make sure y'all come out, check out that beer. The downtown brown is still going strong. I want to mention that because I'm mentioning that to say this. Excuse me. Excuse me. I'm mentioning that to say it doesn't have much longer. Because I think it's time to talk about the beer that comes after the downtown brown. Cold beer ultra. Now, cold beer ultra is it's essentially all the same ingredients as well. Let me back up. The malt profile is the same as the regular cold beer in terms of ingredients, the type of ingredients, the type of malt, it's the same. The amounts of those malts are a little bit different. The beer is 4.2% alcohol. Same alcohol as a curlat. Curlat. Same alcohol as a curlat. Now, the hops are a New Zealand hop called, I'm gonna pronounce it incorrectly. Motuika motuika motuka, however you choose to pronounce it, all of these cicerones and hipsters come at me. I don't personally care. I'm not from New Zealand, not my issue. But it's motuika motuka mottica hops, which give the beer a very lovely fresh lime character. But there is no lime in the beer at all. So I've used this beer before. Uh a lot of our regulars may remember Trisekhis? Yes. Trisekhis? Uh for our uh English speakers, that's three X's. Just want to clarify that.
SPEAKER_01Because not everyone was bilingual.

SPEAKER_02Yes. So three X's. You remember three X's, right? That was our um our beer for um the 5th of May celebration a few years ago. The Battle of Puebla. Something about the French. It's a different discussion. I haven't used those hops in two years. Two years. Yeah, roughly. So I wanted to use them for this particular recipe because I feel that it will complement. I feel this hop will complement that that lower alcohol content. I'm very, very excited about this beer. If cold beer ultra works, there's a chance we could shift not the same hops because those too much of a good thing is a bad thing. So we're not going to be shifting the regular cold beer to those hops in particular all the time. What I'm saying is we may want to shift the malt profile to this malt profile for that low alcohol, for that low ABD. If we can still maintain that smooth flavor, that crisp finish, and where the beer is not watery, the beer still is full-bodied, which I think it will be just from using crystal malt and some other things. I'm totally open to switching to the cold beer ultra malt profile for the regular cold beer, but using a different hop. I'm really digging the German hops on cold beer, regular cold beer. Like the one that's on right now that we're about to bottle on Wednesday, which don't miss it. It is going to be epic straight out of the stubby. But I'm really digging those German hops, man. That gives it a real classic flavor. Very classic flavor that I'm really enjoying. That's all I got for the brew house. So I think there's some food involved somewhere.
SPEAKER_01Somewhere. I mean, I don't know. Let me go through my let me go through my notes. Exhaustive lift. This took me like three hours to figure it out. Of course it did. Of course it did. Three hours and a margarita. So first we have. So I had some extra bra some short ribs left.
SPEAKER_00Aha.
SPEAKER_01That I'm gonna do for tomorrow only. Braised short ribs tacos.
SPEAKER_02Oh my god. So that's gonna be Tuesday only. Tuesday only. They're in the oven. Tuesday, May 12th, which is discount night. $2 off everything, by the way. Yes. Braised short rib tacos. Yes, sir.
SPEAKER_01Comes with lettuce, pico, tomatoes, a little avocado, and some crema.
SPEAKER_02Holy shit.
SPEAKER_01Yes.
SPEAKER_02That sounds incredible.
SPEAKER_01That's gonna be epic. I'm ready. The people, are they ready? I don't know. They might not be. We shall see. It's time to flex.
SPEAKER_02Shit, that sounds like speaking of flexing, what about that brewhouse sandwich?
SPEAKER_01The brewhouse sandwich of the wheat is a I am doing a grilled cheese with a raspberry compound and bacon. And bacon. Two cheeses, by the way.
SPEAKER_02So it's a bacon raspberry grilled cheese. Yes. On sourdough.
SPEAKER_01Well go ahead. Anyone can pick a side. Sure, come to the side.
SPEAKER_02But wait, Desmour. Desmoor. Friday night special.
SPEAKER_01The Friday night special is it's a little old school. Some of y'all might know it. Some of y'all will about to find out. It's a throwback. It's Aunt May's Meg's. Steak special from the movie. Twister. Twister. That's right. You get steak, two eggs, a roll, mashed potatoes, and gravy.
SPEAKER_02That brown gravy. Brown gravy. That's right. So the movie Twister, that iconic where they all descend upon Meg's house, Aunt Meg's house, and all of a sudden.

SPEAKER_02Food. Yes, all of a sudden they they just all of a sudden they're just cranking out these steaks and these cast iron skillets, frying eggs with mashed potatoes and brown gravy and big old dinner rolls. We are doing that on Friday night. So this coming Friday night, don't miss that. It's gonna be the twist, it's the Aunt Meg special, and we are gonna be playing Twister starting at five o'clock. All day. All night long. That's gonna be a lot of fun. That's gonna be a lot of fun.
SPEAKER_01And it'll bring some nostalgia. Some people will love it. Sure. And not the new Twister movie. Oh no. No. God. That is.
SPEAKER_02No, no, we're not paying homage to that. I mean, the movie's fine, but we're just, it's whatever. It just does not have the charm. It doesn't have the style of the old original one. I know I sound like a crazy old man, but I stand by that statement. Uh movies used to have style. They used to have an edge, a style to them. But you whether you like the movie or not, they had an edge to them. Yes, 90 minutes. Like we've talked about before. Well, speaking of that, just like we discussed last week, what happened to the 90-minute movie?
SPEAKER_01Just simple.
SPEAKER_02Yeah. 90 minutes. Movies don't need to have this complicated, very drawn-out exposition where the characters sit in a dark room and they just they just bloviate about their origin story or their complicated scenario that they're in and they're all confused and they don't know who they are. And it's like, oh my god, we're not trying to redo Hamlet. No.
SPEAKER_01This is an action film. You want to watch uh they want to watch Hamlet, watch Lion King. That's correct.
SPEAKER_02But not every film needs to be extended by 30 minutes so the main character can sit around and ruminate about who they are.
SPEAKER_01It's like, all right, we know, all right, Batman, we know your parents died. Get over it.
SPEAKER_00We can get that done in five minutes. Get that done in five minutes. In flashbacks. Sure. We can get that done in five minutes.
SPEAKER_01Superman, we know he left his planet. Sure. Spider-Man. Ben dies. He learns from it. We can get that done quick. We don't need to spend an hour and a half just explaining. Yep. Let's do other things in the film.
SPEAKER_02There's other villains. Yep. So another film rant would be no more CGI. Just stop doing it. No, I mean that sincerely. Stop. Just stop. Like just no more CGI, a CGI moratorium for five years. You can't make a film with CGI in it for five years. Just stop. So there's this thing called set pieces. And there's this thing called shoot location. So what you do, it's a very interesting concept. You take the actors, you take that big budget. Right. And you fucking go to a to a location somewhere in the woods. Yes. It's very interesting. And you have travel trailers, you hook them to the back of trucks and you drive them out to this location and they live in them for a while. It gets even better. And then what you do is you transport all your shit in the back of a trailer connected to a truck. Yes. And then you offload it and then you build a set piece. You know, like a physical location that is not a green screen at a studio in London. We're not doing that anymore.
SPEAKER_01And we all know what studio it is.
SPEAKER_02It's annoying. We're not doing it anymore. Get actors in a fucking field, living out of a trailer, wearing real costumes that were made. So like armor, clothes, employ the local people like they used to do. The local artisans used to make all that crap and dress the actors in proper dress, have them memorize weird lines with a weird language, and go live in the woods for about six months and shoot a film. Have them learn how to ride a horse. They hey, guess what? Guess what? Go get some asshole off the King Rams that knows how to do horses and bring him and his horses to the you take them to the set piece, and then they teach all the actors how to ride horses.
SPEAKER_01All right. Here's a good example. The music movie Fugitive, right? Yes. Tommy Lee Jones. Great movie. Or it might be U.S. Marshals. One of those two movies. Because they go.
SPEAKER_00Yeah, they get all kind of connected.
SPEAKER_01Trying to find somebody in the swamps. They get real people from Louisiana that have swamp boats. To drive out there. No. In the movie, there's a real old timer that just spits some tobacco. And Tommy Lee Jung goes, I'll take Eve. You know where to go. See?
SPEAKER_02See? That's what I'm talking about. Spits this tobacco. That tobacco that he spit was not CGI on a green screen at a studio in London. That was a person who really chews Red Man and fucking spits it. This is my point. Yeah. Just hawks it. This is my point. Everyone is exhausted from the CGI. It's exhausting. It's not original. It's not good. It makes me not want to go to the theaters. Not interested. Not interested. No.
SPEAKER_01Boring. No. Good fun fact. I learned a few months ago, the Oscars will not do AI nominations. There has to be real movies. No AI, no CGI. That won't be a category anymore.
SPEAKER_02Interesting. Trying to protect actors a little bit. Yes. Like real people doing real stuff.
SPEAKER_01Yeah. Like Lord of the Rings. Why do you think they won so many awards?
SPEAKER_02Well, because they did this thing where they went to a physical location.
SPEAKER_01They went to New Zealand.
SPEAKER_02And they just lived there for about 18 months or however long it was. Like three months or three years. Yeah, whatever it was. And they just filmed that whole damn thing at one time.
SPEAKER_01When movies used to, you could feel it when it was filmed together.
SPEAKER_02If it was hot outside when they were filming, the actors would be hot, uncomfortable, and sweaty. Oh, that's great, buddy. Thank you.
SPEAKER_00Yeah.
SPEAKER_02Okay, bye. It to conclude this rant. Stop with the CGI.
SPEAKER_01Because I don't need to go into a movie and watch so much CGI where I have a stroke. Okay.
SPEAKER_02What if we talked about in the brew house?
SPEAKER_01I'm not naming the director. I know. We all know who it is. We know. We know.
SPEAKER_02Okay. We've talked about this in the brew house a thousand times. The mummy. The first mummy movie, 97, 98, 99, whenever that came out, right? Okay. I know I was there. The biggest complaint about CGI is that it's not good anymore. Let me. So the mummy is the prime example. There's CGI in that film, but the CGI, if you watch that movie right now, you just go watch it right now. The CGI looks better than the last Marvel movie that came out. Fight me. Fight me. Pirates. I'm telling you right now, the original Pirates curse the Black Pearl. The CGI in that film looks better. Looks better than their most recent Marvel film. It looks better.
SPEAKER_01How do you explain that? Oh, don't get me on Marvel right now. Because I will. So agitating.
SPEAKER_02It's annoying. But what do we know? What? I don't know. Obviously nothing. We know nothing. Yep. Well, that's pretty much what we got for this week, folks. It's a simple week. I hope you were enlightened by our agitating old man rants about CGI. Yeah. And about the badass beer and the badass food. We look forward to hanging out with y'all this week.
