"The Hidden Truth About Ultra-Processed Foods"

Fifty-three percent of the average adult's daily calories now come from ultra-processed food. For kids, it's 62%. 73% of what's on grocery store shelves falls into the same category. This isn't a dietary slip-up — it's a system built to make the cheapest calories the most dangerous ones.

In this episode, we break down what "ultra-processed" actually means, why the food and healthcare industries are financially incentivized to keep it that way, and what the research really shows: a 2024 review of 45 meta-analyses covering nearly 10 million participants found convincing evidence linking high ultra-processed food intake to a 50% higher risk of cardiovascular death, along with sharply elevated risks for obesity, Type 2 diabetes, and early death from any cause.

No fear-mongering. No fad-diet talk. Just the data, the incentive structures behind it, and practical steps to eat differently in a food system stacked against you.

Welcome back to the Healthcare Management Masterclass podcast. I am your host, Paul Thomas, and this show exists for one reason to pull back the cutting of the system, the initiative in the industry that shapes American health. The part of the machine most people never get to know. We are not here to give you another wordiness tip. We are not here to hand you a diasplane or a five-step morning routine. This show is an optosy of the American healthcare system done in public. One episode at a time. Because in this country, health outcomes are not random. They are downscreen of decisions, decision-making ballrooms, in lobbyers' office, in regulatory agency decades before you ever sit down in an exam room. Every episode would take one piece of that machine and we take it apart board by board with news data from the CDC or when peer reviewed. Research government surveyor system because the truth does not need to be accelerated, it just needs to be said plain it out loud in a country that has gotten very good to making the obvious sign complicated. That is what this show does. That is what we are going to do again right now. Today we are talking about something that touched every single person listening to this show. Not policy, not policy debate in Washington, not a hospital building call, something closer than that, something on your plate right now today. We are talking about ultra processed food. Walking into these conversations. Freezing vegetable is process. Candy beans is process. Roasting coffee is processed. Human have processed food for thousands of years and it has kept us alive. Ultra processed food is different. Ultra process is not your grandmother kitchen with a few more steps. Ultra process is industrious, formulations food breaking down to eight raw components in a laboratory, then rebuilt with added sugar, refined stashes, industrial fat, emulsify, prefluard, compound design to do one job, to make you keep eating. Scientist has a skill for this, it is called their novelt classifications, and ultra process sit at the very top of it. The most engineered, most crap-down, most manufactured category of food can occupy. This is the majority of it. The average American now get more than half of their daily calories from ultra-processed food. For children, it is closer to two-thirds. That means for most kids in this country, the primary field source for developing brains and body is not full in any traditional sense. It is manufactured products. So today we are going to ask the question that cereal boss do not answer. Who build this system? What does the actual sciences happen inside your body when you eat this weed? Day after day, years after years, and why has product so clearly linked to chronic disease been allowed to become the default American diet? This is not lecture about willpower. This is not another episode telling you to eat your vegetable. This is an exposure because ultra-processed food is not an accident, it is not a side effect of modern life, it is a business model, and business model have designed. Let's get into it. Now look at our children, youth-ish, once to 18 get almost 62% of their calories from ultra-processed food. That means the majority of what feel a growth American children bring, bones, and body is not food in traditional sense. It is manufactured products engineered to be eaten. And here is the part they do not put on the label. What is left is salt, sugar, industrial fat, and additive most of us cannot pronounce. That defense is collapsing in real time. In 2025, a random last control trial that goes to medical evidence showed that ultra-processed food drive weight game and damage metabolic and reproductive health. Independence of colossal count. Let that sink in. This was not about eating too much. This was about eating the wrong things, engineer the wrong way, and the body pain depressed regardless of the portion size. And it does not stop at the waistline. A Harvard Least 30 follow nearly 30,000 nurses found that younger women who consume more ultra-processed food, the bread, the breakfast, the soda have a higher risk of colorato cancer in a woman too young to have been on anyone's screening radio. Other research this past year has linked ultra-processed food consumption to early signs of paragraph disease, to cardiovascular disease, to mortality, meaning bloodlate and early death from any cause at all. Scientists are even starting to explain why laboratories tell their own food additive, specifically emulsifiers. The ingredients that keep your process food smooth and shelf stable have shows they can utter gut bacteria in a way that passes from one generation to the next, raising long-term risks for metabolic and inflammatory disease. Your grandmother's soda must be infecting your gut today. And here is the regulatory blind spot nobody talks about full safety testing. Look at additives one at a time. But nobody in this country is eating one. Billions of people every single day are consuming complex mixtures of additives that has never been tested together. We are every one of us living inside an uncontrolled experiment. So let us the health management questions. The business questions who benefit. That is not the accidental output of morning convenience. That is the deliberate output of a business model that maximize repeat purchase. In healthcare, we call a product that keeps the consumer coming back, a strong revenue model. In food, in food. This is the part of the healthcare economies. Nobody put on the slab decks. Sick care is profitable, and when the foreign of the food quietly feeds the back end of the medical system, nobody, nowhere is collecting a margin of both ends. This is no longer a frank consent. On in November 2025, the Lensey published a global call to actions on ultra-processed food, describing what researchers call an urgent health warning to the worldwide search in consumption, leading nutrition force, including Professor Marion Mester of New York University, are owned record saying that fixing this requires policies, not just personal draws, because these products have become entrenched in how entire nations eat. Some countries are already moving. Brazil has tripped most orchid-processed food out of its national school feeding program with a mandate that 90% of school food be fresh and minimally processed by the end of this year. Researchers are calling for marketing limits and up trivia ban on ultra-processed food in schools and hospitals and kept on how much share space this product can occupy in supermarkets. Here at home, states are starting to move too. California has advanced legislation to help sharp and identify healthier alternatives to ultra-processed food right at the point of sales. A force of it can label in force. Progress is happening, but let's be honest about the piece. Regulation is catching up to a problem that has 30 years head start. You do not need a nutrition degree to fight this. You need one skill, recognize the engineer. If a product has a share of life measure in months, not days, if the ingredients list real like a chemistry, set instead of a garden. If it was built to be impossible to stop eating, you are not looking at food, you are looking at formulations. Nobody asking you to grow your own weed. It is about awareness. It is about reading past the marketing on the front of the box and reading the ingredients on the back. It is about understanding that when something is cheap, convenienced, and engineer to be carved, the true cost has just been defer. Because that is the real hidden truth here. Ultra processed food is not hidden because it is secret, it is hidden in plain sight in most of the edges in your grocery store. Normalize how simple it. So let us still mend the other side for a minute. The food industry defense goes something like this. People have free will. Correlations, study cannot prove causations, and besides, processed food feed billions of people who could not otherwise afford to eat at all. Here is the cannot of truth buried in there. And we should say so. It is chef stable. It is accessible in places where fresh food simply is not. For a family working two jobs in a food desert, a bus of mac and cheese is not immemorial failures. It is often the most rational trust available inside a broken system. We are not here to shame anyone standing in the checkout land, but here is where the industrial defense falls apart. Free will to only means something when the playing fee is level. And it is not when a product is engineered deliberately in a lab with food scientists optimizing for something called the bliss point. To override your body naturally setting synops, that is not a level playing fee. That is asymmetric warfare between a tradium dialogue formulation science and a human nerve system that involved over millions of years to trust their sweet emphatic means, rough blade, and values not manufactured and infinite. And collisions not causations defense that died in 2025. We already talked about it. A runalized control trials, the actual ghosting of signs that industrial defender always demanded showed showham independence of calories can they asked for that exact study for over a decade, confident it could exonerate them. It did not announce that it exists. You will notice the industry has gotten a lot quieter about waiting for better evidence. As for feeding billions, that argument could carry more weight if the same company was not spending billions more on marketing than on formulating their products to be less harmful. Nobody is asking this company to stop making convenience affordable foods. We are asking why convenience and affordable has to be also means additive and harmful. Other countries are already proving it does not have to. A one year old simply eat what is put in front of them and increasingly what is put in front of them are designed in a lab not growth on a farm. This is where the free will arguments collapse completely. You cannot tell me a child chose this diet, a child inherited it from a food system, from a marketing apparatus, and yes, from a generation of parents who were themselves raised inside the same engineer environment and were never given the tools to see it directly. And the marketing arm at children is not incidental, it is strategies, break packages, cartoon, mascot, products placed at exactly a child ass level in the groceries alley. Saturday morning advertising slug school vending machine. This is not a food industry that stumbled into feeding kits poorly. This is an industry that identified children as high values, low-resistant customer segments, and built a call in it. The health consequences are showing up earlier than they ever have. Pediatric tattoo diabetes, a disease that needs to be called adult onset diabetes, because it essentially never appears in children, is now a growing clinical reality in pediatric practice around this country. Childhood obesity rate, a market of fatty liver disease in case who have not even hit puberty. This is not a slow moving trend anymore. This is a Compressed Thailand of Harm showing up a four generation earlier than the data ever predicted. This is why Brazil would move to strip ultra-processed food out of school's meals and why it should be a wake-up call here at home. If a country can look at its own children's plate and say no more. The question for us is simply what is stopping us from asking the same questions. Because if this system is engineering and it is, then children are a most defense defenseless target, and that is the part of this story that should make every single person listening genuinely angry. If you want to know whether this problem is fixable, stop looking at America for a minute and look soft. Back in 2016, Chile rose out mandatory black others warning label stick impossible to miss stem on the front of any package high in sugar, sodium and saturated fat. Chile pairs with something most countries could not dare touch. A ban on television advertising of those put up between 6 in the morning and 10 up prohibitions on selling and promoting them in school. That single law, one country, one piece of legislation has since been echoed in some form across roughly 30 countries in Latin America, 11 adapting it to operate. Mexico moved and Mexico gave us something roughly in public health real warproof. In 2014, Mexico touched sugar sweeten, beverage and energy dense stars food. Two years later, purchasing of those products has already fallen. Follow up research into 2026 continued to track half forms of package one label has shifted, what is actually on Mexico's shelf and in Mexican shopping cart. Colombia went further than anyone in the past two years. Colombia introduced the world first broad tax specifically on ultra-processed food. The World Health Organizations on nutritional advisors are watching Colombia as the test case for what happened when a country stopped treating ultra-processed food like all Nora commercials and started treating it like a tobacco. And Brazil's, as we mentioned earlier, is doing something just as ridiculous from the other directions, not taxing the harm, but removing it entirely from where children eat, and 90% of schools' food required to be fresh or minimally processed. It is not just Latin America animal. Canada is enrolling all immediately high-end warning levels starting this year. France, Belgium, Portugal, Finland, and Ezra has all updated that national nutrition guidelines to explicitly recommend avoiding or reducing ultra-processed food, putting it in writing. In official government guidelines, has something to be minimized. India ungovernment economic survey called this year for a healthy task on ultra-processed food, setting nearly a zero country that has already adapted similar nutrition profiling system. Now, here is the uncomfortable comparisons. The United Kingdom is cautionary, tight, worth sitting with because it shows what happens when awareness of peace regulations, ultra-processed foods make up as much as 80% or dire for some group in the UK, even higher than what we see in America. The researchers point out that the UK food industry has built such deep economic and political influence that meaningful regulations keep stalling, lowering the problem, eating earth is not the same as fixing it. So, where does this leave the United States? We do not have a national warning label, we do not have a federal tax on ultra-processed food, we do not have a school milk standard anywhere close to Brazil. What we have is one state, California, taking Elliot, first of it can't step on point of sales, labor link, while the rest of the country waits. This is not a problem with all its solutions. Other nations have already run their experiment, publish the result, and show measurable drop in purchasing when the political will exist. The only questions left for America is not can this be fixed. It is why have not we started. That is the hidden truth about ultra-proched food. Not an accident, not a personal failure, a system built, funded and defended, feeding a pipeline that won't scrap from the supermarket chef to the hospital bear. Let's say it one more time, plainly because plain language is the only thing this industry has never been able to survive. This is not about you lacking discipline at the grocery store. This is not about your grandmother cooking versus your microwave dinner. This is about multi-billion dollar formulation science engineered in test kitchen by food scientists who drop description is literally to Maxima's covenant. You were never just a customer in this system, you were the target, and the data is no longer in dispute. The randomized trial are in the weight gain metabolate damage reproductive harm independent of how many calories you contact. The cohort sterile are in cardiovascular disease, kidney disease, depressions, early sense of packaging, colorative cancer in woman too young to be screened for it. The mechanisms are being mapped in real time down to the multi-five re-written your gut bacteria generations after generations. This is not speculation dressed up as science. This is science that has finally caught up to what your body has been trying to tell you for decades. So what do we do with what we have known? We stop pretending this is personal failure and start naming it as a public health crisis because 55% of the American diet 62% of children's diet is not a left star choice make freedom. It is the outcome of food environment engineer to leave you very little trust at all. We start reading label like we read a contract because that is what it is. Every ingredient list is a disclosed statement. If you know how to read it, a chef life measure in months instead of days. An ingredient listed longer than the food itself, that is not nourishment, that is formulations, and now you know how to spark it. We push for positive conversations to catch up to the science, the marketing limit, the schools and the hospital restrictions, the chef space capped, the laboring law already moving in places like California because individual awareness matters, but it was never going to be enough on its own of market and industry with marketing budget, of marketing budget bigger than most national health ministries. And as we just hear, this vote is not theoretical. Chile, Mexico, Colombia and Brazil has already run the experiment and published the result. And we stop treating the healthcare system and the full system has two separate conversations. They will never separate one feel the other. Quiet literally.
