You know, I'm not yeah, they took me away. They put me in handcuffs and they said we're taking. I actually looked and I saw I was like, let me look at this Sonny's barbecue. I just looked at a couple health inspections today and I tried to remember. And one of them, so they ding they ding a guy because he had a speaker in the kitchen, right? On a shelf.

Can't have that, like a speaker. And then there was like a tong for that in the cook line that was sticking out in the walkway a little bit, so they had to move the tong. Okay. Um, there was one thing where they had a label on the container, like you know, Tuesday or whatever, and then it it it they washed the container, and there was still a little residue from the label on there. Okay. You know, they're just not like they're not, it's it, it's it's I don't know what I have a question because do they do this once a year?

No, every three months. Every three months. So you go through this, you've gone through this every three months for how many years?

23 years. And has it always been like this, or did just some some No, it's all it well, you get different inspectors, and different inspectors want different things. For example, they want the eggs below the meat or the eggs above the meat. You know, everything has to be you can't have raw, you know, chicken above lettuce, right? Okay, because if your chicken juice happens to leak, you don't want it going into your lettuce. So you want the chicken juice down the floor, you know, like not on the floor, lower down in the walk-in cooler. So you have all these things. The beef has to be above, the chicken has to be above the whatever, and the eggs have to be down towards the bottom. Well, one guy comes along and he says, Oh, your eggs are in the wrong place. We're like, we're told that's where the eggs are supposed to go in in this location below the beef. And he goes, No, the eggs have to go above me. So, okay, whatever you say, we put them above beef. This guy comes in today or yesterday, and he goes, Your eggs are in the wrong place. And we're like, Let me show you the inspection where they told us we had to move the eggs to this location. Right. And so now the eggs are in this location because that's what they told us to do. Um, so but every inspector's different.

And what did he say?

They said, Okay, well, we'll just let you leave them where they're at then. Yeah. But like every inspector has their thing. Like this inspector's little pet peeve is the fact that our cutting boards have a little bit of black uh flower dust on them. He doesn't like that, even though if we wipe them off, they come right back if we put a pizza peel down. So then I'm actually looking into like, can I buy like marble for these for instead of these cutting boards? Put marble in there.

Yeah, but if you do what if you make these crazy changes for this person, and then someone else comes in in the next time, and they've got a whole but a bunch of other things.

That's and well, I've done that, I've done that the entire 23 years. Like what we had this station in the front, we went by for a few years, and then a guy comes and says, Oh, you got to put a sink right here. And we're like, We got to put a sink right here. Like, what we didn't haven't had a sink here. Well, you got to put a sink here. So now we're putting a sink there. Then we get then we go about the guy say, Oh, you can't keep your like this is one we've got a rack with um with our with our soda, like our soda bags, you know, for the soda machine in an office, because then the lines go to the soda machine and they're in these sealed up bags. The lines go to these bags, the bags are sealed up. On the top of that rack, we keep our uh pizza bag, hot bags for pizza. If we've got a catering, we throw them in the hot bags. Guy came in, we've done that for I don't know, 10 years. Guy comes in the other day and goes, Oh, you can't keep these hot bags above the soda because this the soda is like an edible product product, and the hot bags are, you know, you're touching them with your bare hands and moving stuff around. And we're like, Yeah, but the bags are sealed, and the hot and we've been doing this 10 years, and we ain't got nowhere else to put these hot bags, or it's pretty tight, and they like it doesn't matter, you got to do what we say. Or you put your you put your aprons in one place and then they say you can't keep your aprons there, but we've had our aprons there 15 years, it doesn't matter. Now you got to move your aprons. This is this is like this is the kind of a nanity it's in it's an it's it's that we go through, and you just what do you do? You just go through it, and then you you want to go on Facebook and or on CNN and do an expose and talk about how bullshit it is, but you know that that's not gonna be good for your for because next time they come, you're going really they can close you down if they want, they can say, Oh, we're closing you down because you got a fly in the kitchen. If they see like fruit flies, they can shut you down for that if they want to. And sometimes you get fruit flies in the drain. Anyway, I'm not gonna keep talking about it every day. I just have to stop, but you got me started again, or I got myself started again. Yeah, you got yourself started. Do you have any questions?

You should look up restaurant inspections in whatever county you're in, and then you can just pick a restaurant that you go to and read what the most recent inspection says, and it'll be interesting. Probably got a lot of slime and mold in the kitchen. Probably you might not might not want to eat there anymore.

Well, but you know, slime and mold is good, it's good flavor. I mean, what's you know, that's how do you make cheese?

I don't think I have anything profound. Well, I don't think I've ever had anything profound, but um I I I'd I'd even take interesting. Well, here's what I can tell you. We went um and and hung out at Ava's restaurant she works at her wine bar the other day, or yesterday. And the Scrabble, the daily Scrabble match continues, and my wife beat me by like 200 points. I mean Did you play at the wine bar? At the wine bar. She she played I mean she had a she had one.

Well, if she keeps playing you, I think she likes beating you and feeling superior to you as a woman. I think she wants to feel superior to you as her man.
