Maybe you've picked some up from the store or shared it with friends or family?

Today, we're going to talk about the benefits of kombucha...

...but we're also going to learn how to make it.

Kombucha is a fermented, lightly effervescent, sweetened black or green tea drink commonly consumed for its supposed health benefits. Sometimes the beverage is called kombucha tea to distinguish it from the culture of bacteria and yeast. Juice, spices, fruit or other flavorings are often added to enhance the taste of the beverage.  Wikipedia

 Kombucha - Mom's Recipe

  •  1 gallon distilled water (minus 2 cups) 
  • 3 bags organic black tea
  • 2 bags organic green tea
  • 2 Tbsp yerba mate (or two bags, if available)
  • 1 cup organic cane sugar

 Directions

  1. Keep 2 cups starter tea from previous batch of kombucha
  2. Wipe container out with vinegar
  3. Heat 1/2 the water until hot, turn off and let tea steep 10-15 min
  4. Add sugar and stir until dissolved
  5. Pour into clean glass jar (preferably with a stainless steel spigot)
  6. Add remaining water and let cool until room temperature
  7. When tea is at room temperature, rinse hands with vinegar & remove scoby from jar
  8. Add scoby to sweet tea and pour starter tea over top of the scoby
  9. Cover with coffee filter and secure with a rubber band
  10. Wait and begin tasting after 7-10 days
