She shares her conversion to Catholicism, her struggle with anxiety and depression and how faith and poetry have brought joy and peace into her life and others. As promised, here is the full recipe if you're into easy, delicious chicken. I usually serve with sweet potatoes and fresh green beans. Mustard Chicken Ingredients: 1/4 cup melted butter 2 Tbs. yellow mustard Black pepper to taste ______________________________ 12 bone-in, skin-on chicken thighs 1 tsp. Sage salt (1/2 tsp. sea salt + 1/2 tsp. dried sage) Directions: Preheat oven to 425 degrees F. In a small mixing bowl, combine the melted butter, mustard, black pepper, and Sage salt. Place the chicken thighs on a baking sheet or oven safe dish, and brush the mixture evenly over each one. Bake for 45 minutes or until a thermometer reads 165 degrees F when inserted into the center of one of the chicken thighs. *Recipe taken from cookbook, Practical Paleo, by Diane Sanfilippo, BS, NC.
