Like it seemed like the"},{"speaker":"Chris Spear","startTime":396.66,"endTime":400.62,"body":"chefs in New York in the early"},{"speaker":"Chris Spear","startTime":396.66,"endTime":400.62,"body":"2000s were, were the kernel of"},{"speaker":"Chris Spear","startTime":400.65,"endTime":403.68,"body":"what you see now every in every"},{"speaker":"Chris Spear","startTime":400.65,"endTime":403.68,"body":"city in America, which is like,"},{"speaker":"Chris Spear","startTime":403.74,"endTime":407.76,"body":"you know, these regional cuisine"},{"speaker":"Chris Spear","startTime":403.74,"endTime":407.76,"body":"hyperlocal that whole movement"},{"speaker":"Chris Spear","startTime":407.76,"endTime":411.36,"body":"sort of was starting in New York"},{"speaker":"Chris Spear","startTime":407.76,"endTime":411.36,"body":"at the time. So I was a poor"},{"speaker":"Chris Spear","startTime":411.36,"endTime":416.37,"body":"stand up comic, but any Penny I"},{"speaker":"Chris Spear","startTime":411.36,"endTime":416.37,"body":"made went to, you know, wildly"},{"speaker":"Chris Spear","startTime":416.37,"endTime":420.0,"body":"different, or April Bloomfield,"},{"speaker":"Chris Spear","startTime":416.37,"endTime":420.0,"body":"or Marissa Vitaly, or like, all"},{"speaker":"Chris Spear","startTime":420.0,"endTime":423.6,"body":"these, all these people who"},{"speaker":"Chris Spear","startTime":420.0,"endTime":423.6,"body":"were, you know, starting up the"},{"speaker":"Chris Spear","startTime":423.6,"endTime":425.52,"body":"food scene there. But every bit of money"},{"speaker":"Chris Spear","startTime":433.71,"endTime":436.47,"body":"that I could scrounge was spent"},{"speaker":"Chris Spear","startTime":433.71,"endTime":436.47,"body":"on going out to eat and just"},{"speaker":"Chris Spear","startTime":436.47,"endTime":439.02,"body":"kind of seeing what was out"},{"speaker":"Chris Spear","startTime":436.47,"endTime":439.02,"body":"there. Because that was, you"},{"speaker":"Chris Spear","startTime":439.02,"endTime":441.15,"body":"know, kind of really pre"},{"speaker":"Chris Spear","startTime":439.02,"endTime":441.15,"body":"internet, right? Like, when I"},{"speaker":"Chris Spear","startTime":441.15,"endTime":444.78,"body":"was in school, I mean, we only"},{"speaker":"Chris Spear","startTime":441.15,"endTime":444.78,"body":"had very, very basic internet,"},{"speaker":"Chris Spear","startTime":444.78,"endTime":447.6,"body":"you didn't really know what was"},{"speaker":"Chris Spear","startTime":444.78,"endTime":447.6,"body":"going on. But by the early"},{"speaker":"Chris Spear","startTime":447.6,"endTime":450.27,"body":"2000s, you started to see all"},{"speaker":"Chris Spear","startTime":447.6,"endTime":450.27,"body":"this stuff like, oh, wow, this"},{"speaker":"Chris Spear","startTime":450.27,"endTime":452.1,"body":"is what they're doing in New"},{"speaker":"Chris Spear","startTime":450.27,"endTime":452.1,"body":"York City. Like, I grew up in"},{"speaker":"Chris Spear","startTime":452.1,"endTime":455.85,"body":"the Boston area. And you started"},{"speaker":"Chris Spear","startTime":452.1,"endTime":455.85,"body":"to become more aware of what's"},{"speaker":"Chris Spear","startTime":455.85,"endTime":458.88,"body":"going on in Chicago in LA. And I"},{"speaker":"Chris Spear","startTime":455.85,"endTime":458.88,"body":"was just like, wow, like, I've"},{"speaker":"Chris Spear","startTime":458.88,"endTime":460.95,"body":"got to start traveling and going"},{"speaker":"Chris Spear","startTime":458.88,"endTime":460.95,"body":"to all these places."},{"speaker":"Chris Spear","startTime":461.37,"endTime":465.3,"body":"Yeah.
