We disappear for a couple months, then come back with the kind of update that only makes sense to bourbon people: we moved the entire whiskey apartment. That means a new, speakeasy style space in the Chicagoland area, more room to host friends, and a bar setup we’re genuinely proud of. It also means hauling roughly 400 bottles up to a third floor with no elevator, with help from our whiskey crew. Building The New Whiskey Apartment

Thanks for being a listener. Um, we do our podcast at our whiskey apartment in the Chicagoland area. Yeah. And Tony had this really bright idea. And it turned out to be a really good one to get a new whiskey apartment, something that uh was rent controlled, something that was more commercial, something that had more space, something that needed a rehab that we could really make our own. And Tony the contractor did exactly that. And we officially, two months later, have a fully moved into, fully decorated, fully painted, fully floored new bar that seats 10 people, and we hauled all of our give or take, plus or minus 400 bottles of whiskey and some tequila over, and here we are. So that's what took two months. We're here. Was that an okay explanation? Well, I try tried to cover everything.

Penelope’s Rise And The Buyout

Uh some Penelope. Yeah. They are a husband and wife team named after their daughter. If I remember when we've done this in the past, I'll go all on memory. And then uh they put out bottle after bottle of really young juice, and eventually it got older, and eventually it got better. And eventually uh they were timed perfectly in the bourbon craze, which was call it five years ago, uh, plus or minus X number of years, and they were purchased for millions and millions and millions of dollars by who do you remember, Tony? MGP. MGP said let's get into Luxor, really.

Because I think Luxor purchased MGP before that.

Let's get into uh this kind of very more specific, um, kind of higher-end, well-branded um you know, MGP Forever was just uh producing the distillate and selling it. And they're like, let's get into uh into bed with a brand like Penelope and let's buy them because we have the money because it's the bourbon craze, and uh-oh. Then it wasn't so crazy anymore. Well that's where we're at now. I mean, the you know I'm not I'm not down in the the biz, but I don't think the timing of that purchase was what I'm getting at. Well, there were a lot of acquisitions going back then. I don't think it was very well timed.

Well, you know, you disagree? Yes and no. I would say that whenever you catch something at the tail end of at its highest peak, it's probably never the best time. But I mean Penelope started in in like late 2018. So I mean they were they were just like you said, um started in the craze and sold in the craze, and yeah, they started, they got locked into the sunset. They were blenders from the beginning, they were never going to distill. They that was their their business model was to blend booze, and they uh they loved four grains and they started with a four-grain and they ended with a four-grain. And what we're having is a barrel strength four-grain.

Batch Six Specs And Why It Matters

And uh, we're having batch six tonight. Batch six is from 2021, which is when people say it actually started turning the tides a little bit because this is when their juice finally hit that four-year mark. And that four-year mark is obviously for all of us that know bourbon, is a big deal because anything earlier than four year is really, really young and can be can be a lot.

Yeah, they said batch five was uh batch six over five. Um, they started to hit their peaks of sweetness, um, and the spice got a little bit heavier, and everything just really got better. Uh, so this is a 115.8 proof. Um, they say blended to a three-year, seven month, but stuff, some stuff is over four years. Uh, mash bill 74 corn, 16 wheat, seven rye, and three malted barley with an MSRP in 2021. Man, wasn't that a different world back then? Yeah, everything I don't know what MSRP of $65 now is, probably uh well, almost you know, exactly five years, a little more than five years later. Um, I think gas is a little different. Mortgage interest rates are a little different.

mortgage rates, I mean everything's up. I mean, food, I mean, we had a we had quite a big uh uh cost cost increase here in the last in the last two years. You and I drive the Guzzlers.

It's not 12, but are you gonna get something electric? I am. I'm actually in the market. I'm I'm down to two cars, but yes, I'm gonna do a plug-in hybrid. I decided to do so it'll still have gas. No matter what. It gets uh one bread. Yeah, once one of them gives you if you plug it into a regular outlet, it'll give you uh the the two I'm looking at will give you anywhere between 40 and 55 miles per day for free, and then the gas kicks in.

Yeah, it's what I want to try it because I mean I don't think from what I've the research I've done, the cost of the electricity is is so minor when you're using a 110 plug, a regular outlet, it it doesn't, you don't even notice it.

So but for but the IRS is gonna think you use gas first and then electric later, right? You're gonna know what you're gonna make sure that those 50 miles every day for work get written off. You can't just be like, wow, what a great savings. Well, the the car will be in my company name, so I'm pretty confident it won't matter. Everything will go. Scratch out hybrid on the title, you're gonna make, no, there's no, there's no electric. Uh I don't use it. I don't I don't know what that is. I don't have to use that. Car guy wanted to get into if Tony uh likes electric cars because I'm not gonna be able to get a big thing. I don't.

I don't I'm not a big fan of electric cars from where we live. It's too cold here in the winter, and I don't want to deal with the the shrinking of the battery in the winter. And I feel like I go to so many kids' sports that are well over an hour away. I just don't want to have to deal with the charging.

Bottle Design And Finding It Today

answer. Penelope bourbon. Today we are drinking the uh straight bourbon whiskey barrel strength. Again, it's a four-grain. You know what the four grains are. We already said 115.8 proof batch six. It's got a really nice uh flour uh etched into the glass, a nice big gold P, and then it's a red barrel strength label. Um, there's a lot of them look, I think very Penelope looks very similar. Um, so you probably want to call out the barrel strength four-grain batch six if you're looking for this. Um 2021, like they probably we haven't looked up. Did you look up how much they made of this? They probably made enough that there's still bottles hanging around.

Um, it's pretty old though. Five years, you're not gonna find it. You can find the 2026 release, and it's still $60, it's still $59.99 MSRP. I meant this.

If you go secondary market, tons of people were picking these up and it's just sitting on their self, and they're they probably have nine, 10, 11 Penelope bottles, and you're just like, hey, anyone want to dump it to me at MSRP five years later? 65, 75 bucks, ship it to your house, boom. If we like it and you like what we say about it and you want to buy it, then I'm sure that's an option. It's not 10, 15, 20 years old, and it's not some um crazy, crazy sought-after bottle, but I'm actually very hopeful that it's pretty tasty.

Yeah, I mean, the reason I grabbed this off our shelf is just because I know that it has won a lot of awards. And Penelope, there's a lot to talk about with MGP and all of the different blendings. And this particular, for some reason, the barrel-proof um Four-grain has won the most awards of all the different Penelope options. And if you go to a liquor store and look at the bourbon shelf, there's there's a lot of options on Penelope now. But I mean, they've won the Oscar, the uh Ascot Awards three years in a row. They've won the you know the World Spirits Competition in San Francisco, they've won bartender awards. They, I mean, this particular bottle, um, maybe not batch six, but this thing has really gotten good. And now that they're um the 2026 versions of seven-year juice, it's probably really good.

Uh, do we know what batch that is, the most recent one? I don't. I'll I'll find it out before we get off. But they said batch six is when they took the turn. So anything at six, seven, eight, nine, they're probably on give or take ten if they do one a year. Um no, I think they're up to twenty. I think we're on to 20.

Thursday is um, well, it's little little piece. Uh, there's a Meekham auction that weekend, uh, starting Wednesday in Nashville. Uh, the auto auction. So we're probably gonna go there on Wednesday and then so fly into Nashville and then drive Nashville to Louisville for bourbon and beyond, um, which is on Thursday, is Foo Fighters, Queens of the Stone Age, and a Tony was going through. I'm like, awesome, awesome, awesome, awesome. Maybe it's just our wheelhouse and our age and whatever, so maybe it's not totally you, maybe you'd like more of like a stapleton on Saturday or whatever.

Yeah, Dave Matthews band is Sunday, Mumford and Stun's is Friday. I liked Foo Fighters. We also go through some of the some of the Thursday bands. Foo Fighters? Uh we've got Foo Fighters, we've got Queens of the Stone Age, we have uh The War on Drugs, Goose, Joan Jett, Four Non Blondes, Cheap Trick, The Frey, Plain White Tees. Um, I can't even read all these. Not nine days. That's enough. They're all those are all big. I mean, there's so many. And there's probably 20 other bands that are super small that you've never heard of. So Thursday, September 24th is when we hoped.

Uh, it's months and months away, but I wanted to touch on that because uh there's supposed to be so many awesome uh distilleries there, so many fun things to do. And then, not to mention the obvious, which is the music, which Tony and I are all about. So uh mark calendar for that. You never know. We might be driving up from Nashville in a new car. We should buy a car at Meekham and we drive it up. That would be really oh man. I hope the alcohol is not flowing too much. That's gonna be a slippery slope. You totally need that 2003 Bentley. Tasting Notes From First Sip

Cheers. I had to have I actually have been uh kind of tasting on it, and I poured really good. I didn't pour myself enough. Um, so I had to pour myself a little bit more. Um I'd say it's very grain forward, it's still pretty young. This one is for sure. Yes. Um I get uh not that caramel, not that butterscotch, but like a a strong like vanilla grain. Uh for sure. Almost like a sweet corn, um vanilla corn, if you will. I mean, for me, little alcohol. Whew, I mean, it's 115 proof, so it hits the nostrils. Sorry, I'll shut up. Go ahead.

No, go ahead. It's I I would say that. I mean, it's it's big caramel, big, big vanilla. It's got a little bit of cherry. I I read stuff about strawberries. I don't taste the strawberry or I'm sorry, smell the strawberry. But I to me it's a um it it smells, it definitely smells grain forward. It definitely you can tell it's a hair or younger, but it's got some good profile pieces.

Well said. I think it has some good profile pieces. Uh is it crazy complex and tons of stuff that I'm like crazy loving on? No, I think it's a it's a vanilla grainy, uh young, high-proof juice, but um uh I got no problem with it. Yeah, let's take a seriously.

Okay. I don't know if the balance is totally there. It's kind of got like it's kind of like a pinball like bouncing around like it doesn't really know what it wants it to be, but I would say still that nutty, spicy, creamy, sweet, sweet, sweet. I think it's got a lot, a lot of s I think the sweetness is is its top characteristic. Would you agree?

A thousand percent. Because I think that without the sweetness, this just fades away as something else.

Four Grain Sweetness And The Finish

I mean, four grains are really if a good four grain because you get the wheat added into the um the spice, the cinnamon spice of a rye. The wheat helps it a little bit. Can really help it. Um I mean, Mike Mike has done a lot of tasting over the last couple years on four grains, and I'll tell you, it this one this one has got a really good base characteristics. Again, this is a younger version of it.

Yeah, I would say the the the least in the way of strength. I like the proof. Um in the way of the cherry. I like the cherry. I get the cherry. It's a little, I do too. It's a little uh it's a little grainy and it's a little young. But um, this is when we were pretty crazed, and it wasn't it's still not crazy at all to spend 65 bucks on a bottle. Um and uh I I would put it in the worth a shot. Um it's it's it's pretty damn good. It's good. I mean, I think it's got a lot of way better than I thought it was gonna be. Sorry.

Well, that's I mean, that's the best part because I you know, I I literally pulled this right off of our shelf, and this is a bottle that's been sitting here for four years minimum. And and made the move. Made the move, made the new shelf, has the light behind it, looks cool in the entryway too. And we've got a bunch of uh Penelopes there. When Mike and I were texting earlier being like, hey, what do you want to taste today? And we were like, let's do something that's like we have on the shelf that people can get, something easy, as we would say, not something that you have to go buy extra for or whatever. Um, I I threw out I threw out Penelope, and and he was like, Well, which ones haven't we done? So I looked back and we haven't done this barrel strength, and it gets a lot of high remarks, and I think it's it's worthwhile.

Yeah, and they they put some thought into that four-grain and that um what is uh 16% wheat? I hope that's what I said before. 74 corn, 16 wheat, seven rye, and three barley. That's what you said. It's a lot of wheat, um, and it really rounds it out, kind of brings that vanilla out, brings that sweetness out. Um, it's just, I can't imagine four more years getting that like oaky woody um age on it. Um, you would still have all of those things. You would just have, you know, more of that complexity with um a little bit more, more kind of fun in the glass.

Can I say that? Yeah, for sure. And I think that that seven percent rye that you said is what's making the finish. Because I think the finish is a medium finish. And I think that the the flavors that are coming out with the brown sugar and the cinnamon, I think that's a hundred percent that seven percent rye. I think if this was not a four-grain, the finish would be very light and a lot of people wouldn't like it. Or it would be very alcohol forward, one or the other.

And they were buying MGP uh juice because I mean, probably their sweet spot, in my opinion, was probably like 2010 to 2020. Like the real bourbon wasn't, I mean, there were there was a craze, but um, that's when everyone kind of everyone kind of figured out what they had and how they did it, and their water and their distillate and how just everything. And then Penelope jumped on board and went right along, you know, rode that exact train, which is they it's just it's just good whiskey. Um, even even at a short four years and blended properly, and the guys over there know exactly what they're doing to put something out that's very um comes off very sweet and and and in a lot of ways perfect.

Penelope’s Future And Finished Barrels

I really do. I mean, I think the brand's trajectory now that they've got the MGP backing, it's just it's really solid. I mean, they've got they're already this year hitting an older age statement with a seven year on the barrel strength, right? They're they keep doing all these weird barrel finishes. I know we have the Havana, the Havana one in there, or was it Havana, Havana, something like that? Havana, yes.

And then they've got rum casks.

Yeah, they've got Rio. They've got I think they're coming out with other ones. And honestly, I'm expecting MGP to have a whole bunch of stuff buried somewhere. And now that they're that they're really selling their own juice, maybe they maybe they bust out some really good premium releases. You never know. Um, I think that with with Luxor buying MGP and with the Penelope being the bourbon under it that has some some name recognition, you might get some stuff out of them. This is definitely one to keep your eye on, in my mind.

And I think the future's the future's bright. I mean, I it might not be this year, but you know, look at 2030, four years from now, and they're they're pushing 12-year juice somewhere, 10-year juice. It could be some really good shit that MGP pulls out of the vault.

My wife took a trip to uh to Cuba to Havana, and she came home with what they call Ron, not rum, they call it Ron. And uh, I just started drinking it. And I was like, this is really good. And she was like, No, that I brought that back special. And I was like, babe, it's 20, it's $20. And she was like, she made such a great point in like our whiskey world. She was, yeah, but you can't get it. And I'm like, Oh, you gotta go all the way to Cuba to get it. And I was like, I'll find and I did find it on another website for about Twice that much, but still a $40 bottle of rum is not too bad. But uh man, they have some. I want to try that Havana. I bet it's good.

Um, but the islands in general have a lot of good rum. But I I I've never been a super rum guy because it just gets so sweet. So I'm curious to see how they how they uh battle the sweetness of rum. But we'll see. I mean, we'll we'll pop it open one of these days.

Influence to me, I would say, is is average because it's a new place. I'm not going to give them too many credits, but I know MGP's got a really good reputation, and price is fantastic. You buy bottles at seven bucks, $70. That's really good. It's not as unfortunately common nowadays.
