Nutrition with Judy | Carnivore Diet
The Nutrition with Judy podcast is for people who are tired of surface-level wellness advice and want to understand what is really driving chronic symptoms, inflammation, metabolic dysfunction, gut issues, autoimmune patterns, and complex illness.
Hosted by Judy Cho, Board-Certified Holistic Nutritionist, functional medicine practitioner, and author of Inflammation Fix, the show explores root-cause healing through the lens of nutrition, environment, nervous system regulation, clinical pattern recognition, and personal responsibility.
Drawing from thousands of client cases, clinical insights, and conversations with leading experts in nutrition, psychology, medicine, and research, Judy breaks down complex health topics in a way that helps listeners become more informed, discerning, and self-advocating.
After rebuilding her own health through a carnivore elimination diet and a root-cause approach, Judyโs mission is to help people better understand their bodies and live the life they are meant to live, nearly symptom-free.

Dr. Gary Fettke and I dive into the real drivers of modern disease: sugar, processed carbohydrates, and seed oils, and which of the three is doing the most damage. We break down the biochemistry of fructose, the polyol pathway, and how LDL particles are affected by diet. We also get into the origins of fat shaming, how pharmaceutical companies shaped public language around obesity, the fiber myth, and why cholesterol is wildly misunderstood. Make sure to listen to the full interview to learn more.
Dr. Gary Fettke is a retired orthopedic surgeon and one of the earliest and most vocal proponents of low-carb, ketogenic, and carnivore nutrition in Australia. He was among the first in the world to describe the combination of sugar, refined carbohydrates, and seed oils as a nutritional model of inflammation and modern disease, a framework he developed back in 2013. Despite being investigated by the Australian medical board for his dietary advocacy, he has continued to push for change in national nutrition policy, helping make low-carb the nationally recognized strategy for diabetes management in Australia. He works alongside his wife Belinda Fettke, whose research tracks the ideological and corporate forces driving flawed dietary guidelines.
We discuss the following:
- Dr. Fettke's background and update
- Sugar, carbs, and seed oils explained
- The polyol pathway and fructose overflow
- Seed oil half-life and inflammation
- Real-world cases and MS recovery
- The biggest dietary culprit
- Obesity stigma and pharma influence
- Cholesterol, LDL particles, and statins
- Lipid subfractions and cardiac risk
- The dietary evolution
- No biochemical need for ingested carbs
