Y'all were talking about bear and wondering what it tastes like, I have some answers! For context, I'm a member of the Choctaw/Chahta tribe of Oklahoma. I hunt deer and bear (though I haven't had luck with bear, my dad has) Up north where it gets colder, bear meat has an awful gamely taste. Their main diet consists of small animals, the red meat they eat leads to a strong irony taste. Down south, our winters aren't as harsh. We still have vegetation, berries, acorns etc longer into the winter/fall. This means bear only hunt when they have to. It's very sweet and the fat leads to it being very tender. You get lots of tallow from bear if that's your thing. It tastes like deer only gamier and sweeter.
