Joanna Struiksma-Facey is a Dutch/British design consultant and self-taught baker. In collaboration with Cyntia Apps, she has compiled her recipes from her childhood in the Netherlands and Scandinavia into a cookbook “Joï: Baking and Photographing Northern European Pastry”, with the goal of inspiring people to enjoy pastry the way people do in Northern Europe. Through great design, detailed instructions, personal storytelling and clever use of multi-media, Joanna makes baking pastry an un-intimidating, multi-sensory journey.
