“It’s Alive!” Cupcakes

Ingredients

Cupcake

  • 1 box white or vanilla cake mix (I use GF)
  • Whatever ingredients the cake mix box calls for
  • Red raspberry jam

Cream Cheese Frosting

  • 1/4 cup unsalted butter, softened
  • 4 oz cream cheese
  • 1/2 tsp vanilla
  • 1/8 tsp salt
  • 2 cups powdered sugar, sifted

Directions

  1. Preheat oven to 350°F. Line a 12-count muffin pan with cupcake liners and set aside.
  2. In a large mixing bowl, prepare the cupcake mix according to the instructions on the box.
  3. Fill cupcake wells and bake cupcakes according to instructions on box. Let cool completely.
  4. When cool, cut a small core out of each cupcake and fill with about 1/2 tsp-1 tsp red raspberry jam.
  5. Frosting: Combine butter and cream cheese in the bowl of a stand mixer (or you may use an electric mixer) and beat until creamy, well-combined, and lump-free. Add vanilla extract and salt and stir well to combine. With mixer on low, gradually add powdered sugar until completely combined.
  6. Frost with cream cheese frosting.
  7. Enjoy!
