This fascinating chat with charcutier Richard Bosman was prompted by an article about a dish he created for a story by Tony Jackman in Daily Maverick. I've known Richard for a while and always admired his artisanal charcuterie business, but reading the story reminded me that he'd be a great person to chat to on the show.
