Easter weekend on Fort Myers Beach can feel like a sprint, so we head to Snug Harbor to get the simplest thing you can have on a holiday: a clear plan. Jason joins us waterfront to lay out the details that matter when the island fills up, including regular hours (11 a.m. to 9 p.m.), reservations for parties of 10 or more, and a walk-in flow designed to keep waits reasonable even when the crowd is strong.
Then we get into the fun part, the Easter specials menu from Chef Rizzo. Think classic comfort done right and seafood that tastes like the Gulf: French onion soup with caramelized onions, sherry reduction, and toasted Alpine Swiss; coconut shrimp with a chili garlic orange marmalade sauce; slow-roasted prime rib with garlic mashed potatoes and creamy horseradish; Australian rack of lamb with a rosemary panko Dijon crust and minted lamb demi; and American red snapper prepared Francese style with lemon beurre blanc, saffron rice, and green beans. We also talk about a standout salad that eats like a main, a shrimp and scallop Asian noodle salad with roasted pineapple and Thai peanut vinaigrette.

Easter Weekend Plans At Snug Harbor
"Cabo" JimWelcome, good neighbors, to another episode. Today we're at Snug Harbor getting ready for Easter weekend, right? Absolutely. And we've got Jason with us.
Jason JakaitisYes, sir. Yes, sir. How are you doing out there?
"Cabo" JimPleasure. Pleasure to have you here today and excited to hear what you got in store for this weekend.
Jason JakaitisYeah, yeah. It should be a big weekend. Yeah, yep. It's uh looking a little bit uh a little bit iffy, but it'll be a great day.
"Cabo" JimWe do need a little rain, but not right now, not right now.
Jason JakaitisExactly. Yes, yes, absolutely. But yeah, so getting ready for Easter, got a lot of uh great specials. We're getting ready to uh have that day. Um, you know, we're open for regular hours, so we'll be open from uh 11 o'clock until nine o'clock.
"Cabo" JimOkay.
Jason JakaitisUm, we'll be uh reservations, we'll be taking reservations for parties of 10 or more. All right. Um, but everything else will be walk-in. Uh, we usually get everything in and out pretty quick, so there shouldn't be too much of a wait. Uh, we got a special menu that Chef Brizzo prepared for you guys.
Chef’s Specials Start With Soup
"Cabo" JimSo yeah, he does a great job.
Prime Rib Lamb And Fresh Snapper
Jason JakaitisHe's got uh some French onion soup for us. So we're gonna do a uh French onion soup. It's gonna be sauteed caramelized uh onions with some sherry reduction, some veal stock, uh some croutons on the top, and then toasted with some uh alpine Swiss cheese on the top. And we'll also be doing for an appetizer some coconut shrimp. So we got some butterfly white shrimp. We're gonna uh encrust those in panko and some uh coconut flakes, and then that's served with a fresh chili, garlic, orange marmalade. So we'll have that for an appetizer. We're also doing roasted prime rib. So we've got roasted prime rib that'll be slow roasted. It's gonna be served with garlic mashed potatoes, uh house-made green beans, and a creamy horseradish sauce, and then we're also gonna do some Australian rack of lamb that'll be served uh roasted with rosemary panko Dijon crust, and then a let me get this right, a minted lamb demi that we'll also be doing on the side with it. And then, of course, for our fresh fish special, which we get right over the first fridge over there. Yeah. Our fish camp over there that brings us all our fresh fish in. We'll be doing the uh American red snapper, we'll be doing that frances style, uh, dipped in egg and then uh seared on each side and then baked. It'll be uh served with a lemon beer blanc, and then on the side it'll have saffron rice and house green beans. So that'll be available. And then we're gonna do an interesting salad, a shrimp and scallop Asian noodle salad. So we're gonna have some uh a cilantro, a cilantro lime marinade for the shrimp and the scallops, and then they'll be grilled and served on top of a low-main salad with roasted pineapple and a Thai peanut vinaigrette. Wow. So yeah, so we got a lot of great specials. A lot of people know Snug Harbor for their great specials and that. So Chef came up with some good ones for us.

Drink Picks And Band In The Park
Jason JakaitisYeah, and we're ready to go. So yeah, like I said, we'll be open at nine o'clock, uh 11 o'clock, we'll close at nine, we'll be ready to go.
"Cabo" JimAny any drink specials going on?
Jason JakaitisAny drink specials? We always have the ultimate margarita, which is right, what sense which is amazing.
"Cabo" JimYeah, more than a margarita.
Jason JakaitisAnd if you're coming early, make sure you grab one of our uh ultimate bloody Marys. Oh, that's too, right? It's like a lunch in a glass, it's got uh Capricorn and ham, salami, olives, uh pickle, all kinds. A meal in itself. Yes, a meal in itself. You got it. So yeah, we've got those going on too.
"Cabo" JimIs there anything else going on in the area? Is there anything going on in the area?
Jason JakaitisThere is actually we do have a uh uh band in the park. Um, it starts at four o'clock till 7:30, weather permitting. Yeah, just make sure you guys stay tuned to our Facebook uh site. Like and follow. That way you can find out uh when all of our specials are and if there's any cancellations with the band or anything like that. We always keep it updated.
"Cabo" JimSo very good, very good. All right, coming out for Easter, great place to be right on the water. You got it, you can't beat it. Gotta love it, gotta love the view and have a wonderful Easter. I I'm gonna be down here because that sounds good.
