Who is the chef training for?
The chef training is for you!!!

I am a primary school teacher trained, so I know how to ensure your needs at the level you are at are met well.

So many, many reasons for doing the vegan chef training.
Two people took the course because they wanted to help their mums with their health conditions.
I'm not vegan. Can I do it?
Absolutely.
If you are vegan, plant based, vegetarian, a meat eater, whatever your food choices are, you are most welcome to do the course. People come and do the course because they want to put vegan options on their existing menu, or they are now allergic to meat due to a tick bite. Whatever you are, you are welcome to come and enjoy learning how to cook delicious vegan food.
I am vegan and want to feel safe in a course I do
Absolutely. It is my mission to make sure you are safe when doing this course. As a fellow vegan, I know discrimination and I hate smelling meat smells around me. The beauty of this course is, you do it in your own home environment, where you can feel comfortable. We will not talk about meat and dairy either. I know this can stress some people out, so it won’t be a thing in the training, that is for sure.
What do you teach in the training?
We do the foundation course,
where we learn the basics and the things that are super important – like creating balanced meals, complete protein, how to make food taste good, how to present it well in a buffet style, how to balance flavours. You learn to make protein rich meals, and the best healthy burger pattie ever. You learn how to convert non-vegan recipes to vegan ones.
Fridge staples like mayonnaise, butter, pestos, hummus,
how to cook beans and legumes well,
how to cook grains like a pro,
how to make regular cake recipes vegan and gluten free ones.
Then there is raw cuisine
We learn simple and complex techniques in the world of raw cuisine.
Traditional raw food, like gaspachio, and avocado and cucumber soup, and walnut sauce, salads etc. and then creative raw, like – raw pad thai, lasagne, tarts etc.
and then there is the raw cakes and epic cake decorating.
In this module you learn kick arse cutting techniques, using the French chef terminology and how to plate up on individual plates.
Ayurvedic Cuisine
You learn how to cook Ayurvedic cuisine. You learn about the three doshas, and how to create tridoshic food, and food for the individual doshas. You learn Indian Ayurvedic food and how to make all the different cuisines for the different doshas.
You continue to plate up on individual plates.
Macrobiotic food and wholefoods and Italian Cuisine
You will learn how to make items from scratch, and explore the origins of a macro (Buddha) bowl, and what makes really well balanced macro food. You also learn how to make Italian cuisine vegan, including gluten-free and wheat ravioli.
Fermentation
Kombucha, miso, tempeh, sauerkraut, fermented veg. and kimchi.
Dietary Requirements
Dietary requirements. How to make your food inclusive for all. How to navigate cooking for people with allergies and dietary requirements.
Menu Planning
Planning menus for all sorts of cooking scenarios, and how to order produce for these menus.
Faux foods and event catering
You get to work on specialised meals of your choice, and there is an optional event cake baking course (which is actually in person).
Establishing a business
Ensure you are following safe food hygiene practices, processes to get your own business established.
What would my life be like after the training?
You will have the confidence to create exceptionally delicious food, in any situation you find yourself in. You will have an idea, and already be starting on, your journey of working in the field of food.
I am not sure if I want to do it, it scares me.
I would look at what it is that is making you scared and see if it is self-sabotage. Also, email me and we can organise a chat, or have an email connection about what it is that is making you scared.
I don’t want to do it to create a business, but would like to just do it to cook for myself.
Absolutely, many people do the course just for themselve. Being a vegan chef is a great skill to have in your everyday life.
How do we attend the vegan chef training?
Online in 18 x 3.5 hour sessions, with me live – we cook together, and in the August 2025 course, there will be two others and in 2026 four others.
Why is it online and not in person anymore?
To keep the costs down and make it more accessible, as you don’t have to fly to Murwillumbah.
Also, you get to use your own kitchen and the equipment in your kitchen.

Do I get a certificate?
Absolutely. You get a certificate from me. It is recognised by vegan cafes and restaurants in Australia.
Do I need fancy equipment?
No, you can start with what you have. A blender and food processor would be good. A NutriBullet is good if that is what you have. We talk about what you may need, but it is good to just start with what you have.
It feels like a really big investment
It is. You get a lot on the practical level.
18 x 3.5 hour sessions live with me.
Comprehensive manuals for each module.
Hundreds and hundreds of recipes.
Email and text messaging with me in working hours during the course and up to a month after the course.
3 x 1 hour group mentoring courses after the course.
Plus, you are investing in your dream, you are investing in your future.
What if I don’t have that money right now?
There is 12 month payment plan.
What sort of ingredients do I need?
The ingredients will be ingredients that you can easily source.
When do I get the shopping lists?
At least a week before the lesson.
What happens if I can’t attend a session?
If it is something you have prearranged, like a wedding etc. we can see with the other participants if there is a different date we can all do. If this is not possible, you will get the recording of the session.
How many people are in a course?
in 2025 there will be 3 people
In 2026 there will be 5
Do I have a graduation?
If you would like to have a graduation, you can do that. You can cook for your friends and family, and I will give you your certificate and make a speech via zoom. Or if we live close by, I can come and attend in person.
How skilled will I be after the training?
You will be qualified to work in a café or restaurant or your own business.
What do you do in the business section?
Ensure you follow safe food hygiene practices and processes to establish your own business. E.g., doing your food hygiene certificate, registering your business name and registering with councils, etc. Business plan (if you want to) and promotion etc.
What happens if I don’t want to do the business section?
You don’t have to. I will get you other things to do.
What if I don’t like working on zoom and with a group of people?
You get to work how you want to, so if you struggle being live on zoom we can discuss this and work out a way for you to still attend.
