Today on our episode #434 of All in the Industry, Shari Bayer has a special “On the Road” show, which is part of our three episode series on Ein Prosit 2025, an extraordinary multi-day event that took place from October 15-20, 2025 in Udine, Italy, featuring some of the greatest Italian & worldwide chefs. This was Ein Prosit's 26th edition, which included outstanding collaboration dinners, tastings, food trucks and more, bringing together the hospitality community.
During the event, Shari sat down with the following participating chefs to talk about their culinary backgrounds & experiences at Ein Prosit:
Eric Robertson, Canadian co-chef & co-owner of Restaurant Pearl Morissette, a two Michelin star restaurant, which he opened with chef Daniel Hadida in 2017 in the Niagara region of Southern Ontario, offering an ambitious fine dining experience. Known for its farm-to-table philosophy, the restaurant is highly celebrated for its seasonal tasting menus & onsite regenerative farming, earning accolades, including a Michelin Green Star, #3 on the inaugural North America's 50 Best Restaurants 2025, & #1 on Canada's 100 Best 2025. The property also includes RPM Bakehouse, Cafe & Shop, & Winery. (5:58) And,
Diego Rossi, chef & co-owner of Trippa Milano in Milan, Italy, an acclaimed Milanese trattoria, which he established in 2015 with his business partner Pietro Caroli. Known for modernizing traditional Italian offal-based dishes, Diego blends fine-dining techniques with casual, sustainable, & ingredient-focused cooking. As its name suggests, the restaurant always has its eponymous tripe on the menu, along with a seasonal dishes focused on the Lombardy region. (36:08)
