[VIDYA]: Many people have been making their tea wrong for years and don't even know it. If you've ever thought tea was bitter or just booooring, this episode will change your mind.
[1:20] What Happens When Someone Walks Into Tea & Turmeric in Laguna Beach
[VIDYA]: Every day in our shop in Laguna Beach, someone stands in front of our shelves, takes in all the jars of teas, and says, "I don't even know where to start."
I love that moment because it means they're curious.
Tea isn't just another drink. After water, it's the most popular beverage in the world. Wherever you go, you'll find people reaching for a cup, to wake up, to relax, to connect, or to just take a breath.
And for me, it's personal, as well. Hi, and welcome to The Tea on Wellness. I'm Vidya, your host and co-owner of Tea & Turmeric. My sister, Kavita and I opened this shop to share what tea gave our family: a way to care for our bodies, to slow down, and to create small daily rituals that feel like home.
If you're new to tea or just want to reconnect with the basics, this episode is for you.
We'll talk about what tea actually is, why there are so many kinds, how to brew it so it tastes the way it should, and what it can offer your body and your day.
I'll dive deeper into each type of tea in future episodes, so stay tuned. But today, I want to keep it simple. Enough to help you feel confident choosing your next cup.
[2:30] Real Stories: How the Right Tea Changed Everything for Two Customers
[VIDYA]: Here's what I see every day in the shop.
Last week a woman came in who hadn't slept well in weeks. We helped her pick out a calming herbal blend with lemon balm, lavender, and chamomile. A few days later she came back with a smile and told me it was the first full night of sleep she'd had in a long time.
Another customer came in completely drained from work and said he didn't want the sharp edge of coffee anymore. We recommended our mango peach green tea. A week or so later he stopped by to pick up more tea and to tell us it had become his afternoon ritual and he finally felt focused without feeling wired.
That's what tea does. It helps you come back to yourself.
[3:30] The Ancient History of Tea: From Chinese Medicine to Global Ritual
[VIDYA]: Tea has a rich history because it's been around for thousands and thousands of years.
In China, where tea was invent was seen as medicine and then became a daily ritual. In India, tea plants grew wild in the forests of Assam long before they were cultivated.
Tea started out as a healing drink in ancient China, then made its way across Asia and into Europe, where it took off, especially in Britain. It wasn't just a cozy habit either. Tea helped shape trade routes, sparked the Boston Tea Party, and even led to massive plantations in India. All from one little leaf in hot water. There is SO much history about tea that I'm making a note to myself to think about a whole episode devoted to it!
But for me, the story of tea became real in Kerala, southern state in India. When I was studying Ayurveda there, I visited a tea plantation. I remember standing on those hills surrounded by rows of bright green, watched skilled hands pick leaves with such care and intention. It changed the way I saw tea forever. When I look at our wall of tea jars, I see more than dried leaves. I see that journey, those hands, and the respect that goes into every blend we share.
[4:40] What Is Tea Really? The Camellia Sinensis Plant Explained
[VIDYA]: Here's something you might not realize.
Did you know that all true teas, white, green, oolong, and black tea, come from the exact same plant? It's true! Any tea that naturally contains caffeine comes from the Camellia sinensis plant. Believe it or not, the same tea leaf can become any of these different types of tea, depending entirely on when it's plucked and how it's processed after it's picked.
Herbal teas on the other hand, though they are called tea, are actually tisanes, which aren't from the tea plant at all. They're made with herbs, flowers, fruit, and spices and don't contain camelis sinesis leaves, so they're naturally caffeine-free.
Let me walk you through the main types of tea, so you can get to know them and feel familiar.
[5:30] White Tea Benefits: The Lightest Most Antioxidant Rich True Tea
[VIDYA]: White tea comes from the youngest buds. It's light, sweet, and delicate, with the least amount of caffeine of all true teas. It is picked, dried and sometimes shaped by hand.
At the shop people love our White Peony for its soft, floral notes or our Ginger Pear for a little fruit and spice.
White tea is full of antioxidants and feels like a quiet morning in a cup.
[6:10] Green Tea Benefits: Why It Turns Bitter & How to Fix It
[VIDYA]: So, remember how I mentioned that the same tea leaf can become all the different types of true tea? This is a perfect example: you could take the very same leaf that would have become white tea, and by either pan-frying or steaming it, you would create green tea instead. Green tea has a whole different character, it's bright and refreshing. Sometimes it's grassy, sometimes nutty, and sometimes just smooth and clean.
If you've ever had green tea that tasted bitter, it probably wasn't brewed properly. Water that's too hot or steeping it too long can ruin it, more on brewing tea properly later.
Our Mango Peach is fruity and uplifting. Lychee Rose is floral and elegant. Cherry Blossom is subtle and smooth.
Green tea is rich in catechins, antioxidants that support your heart, brain, and metabolism and soo much more.
[7:10] Black Tea vs Coffee: Caffeine, Flavor & Why Black Tea Wins
[VIDYA]: Now if you take the green tea and then oxidize it, which is the same process as a banana turning from yellow to brown, you get black tea. Black tea is what most people picture when they think of tea. Bold, full-bodied, and comforting.
It has the most caffeine of the true teas, though still less than coffee...did you know that black tea contains half the caffeine and acidity that coffee does.
At the shop we have our grandma's Pink masala Chai, which is our top sellers, it's warm and spiced. Our Orange Cinnamon feels cozy and grounding. Moonlit Earl Grey has a soft touch of creamy vanilla.
We also carry Pu-erh, a fermented black tea that's earthy and smooth, amazing for gut health.
[8:10] What Is Oolong Tea? The Rose of Tea Explained
[VIDYA]: I like to explain that Oolongs are the rosee of tea. If you think of green tea as white wine, and black tea as red wine, oolongs are somewhere in between, a rosee!
Oolong teas are so unique because they're partially oxidized. This process gives them incredible layers of flavor, you might find floral, roasted, or buttery notes, sometimes all in the same cup! And because they exist on a spectrum, less oxidized oolongs will look and taste a bit like green tea, while the more oxidized ones are darker and closer to black tea.
Oolongs are great for multiple steeps. The flavor changes with each pour, which is one of my favorite things about them.
Try our Milky Oolong, it's smooth and creamy. Our Peachy Keen has a hint of fruit but stays complex.
Oolong supports digestion and metabolism and is perfect when you want something satisfying and layered.
[9:00] Herbal Tea vs True Tea: What Is a Tisane & Why It Is Caffeine Free
[VIDYA]: As we talked about earlier, herbal teas don't come from the tea plant at all. They're made from herbs, flowers, fruits, or spices and are naturally caffeine-free.
We blend rooibos and lavender in our sleep teas, peppermint and ginger for digestion, hibiscus and rose for something bright and energizing.
Herbal teas are perfect when you want the ritual of tea without the caffeine.
[9:30] How to Brew Tea Correctly: Water Temperature & Steep Time for Every Type
[VIDYA]: Now that we've talked about what tea actually is, let's talk about brewing tea. One of the most common mistakes I see... is using water that's too hot or steeping the tea too long.
Every tea has its own sweet spot, but here are two easy rules.
For green and white teas, let the water cool for a three to four minutes after boiling, then steep briefly about 2-3 minutes. Using water that is too hot and/or steeping green tea too long will make it bitter and have more caffeine.
For black tea, boiling water is perfect, and you'll want to let it steep for a little longer, about three to five minutes. That longer, hotter steep time brings out those rich tannins, which is why black tea is so wonderful with a splash of milk to balance out that brisk flavor.
Herbal teas are a little different. They can handle boiling water and much longer steep times, usually five to ten minutes, but you can even let them sit up to twenty minutes if you want to draw out all the medicinal benefits.
If any tea you make tastes bitter, it's usually because of your water temp is too hot, you steeped it too long and you used too much tea leaves or a combination of these.
Take a moment to watch your leaves open, smell the steam, and notice how the color deepens. This is what turns tea from just a drink into a daily ritual.
[11:10] Why Tea Is the Perfect Wellness Ritual for Life in Orange County
[VIDYA]: Nowadays, life in Orange County and everywhere moves fast. Even in a place as beautiful as Laguna Beach, people come in looking for a reason to pause.
Tea helps you do that. Even just five quiet minutes with a cup can reset your whole day.
What I love most is that every customer brings their own story. Someone tells me about a recipe for a cold fighting tisane from their grandmother. Someone else tells me how they brew oolong at home. We love hearing all your stories and connections to tea. That connection is why we opened the shop in the first place.
