Learn Ayurvedic cooking basics with simple recipes, healing spices like turmeric and cumin, and traditional dal from Tea & Turmeric in Laguna Beach.

Why This Episode Matters
Indian cooking has a reputation for being complex, time consuming, or full of hard to find ingredients. The truth is that real Indian home cooking is simple, intuitive, and built on love and everyday wellbeing. Most people just need someone to show them how to begin without feeling overwhelmed.

In this episode of The Tea on Wellness, I take you into the kitchen that shaped Tea and Turmeric. It is the same place where my grandmother Amma Amma taught me to cook with intuition, to trust the spices, and to bring attention and care into the pot. These lessons became the heart of our Indian Made Easy Kit and the foundation for our cooking classes here in Laguna Beach.

If you have wanted to cook Indian food but never knew where to start, this episode shows you how to make it joyful, nourishing, and deeply connected to Ayurvedic wisdom.

Indian Cooking Made Simple
Indian flavor comes from balance. A little heat from ginger. Warmth from turmeric. Digestive support from cumin. When you know the purpose of each spice, the process becomes natural rather than intimidating.

In this episode, I walk through our handmade blends from the Indian Made Easy Kit, including Veggie Mix and GG Mix, and explain how each blend supports both flavor and wellness. We also explore how Ayurveda uses food to calm the mind, support digestion, and build daily vitality in gentle and accessible ways.

You will also hear the story behind Amma Amma’s dal, a comforting red lentil and split mung dish taught in our Laguna Beach cooking classes and loved by families across Orange County.

From Amma's Kitchen to Laguna Beach: Indian Cooking, Wellness Rituals, and Easy Recipes

[1:00] Indian Cooking, Real Spices, and Wellness Rituals: Welcome to The Tea on Wellness

[VIDYA]: Ever stood in the spice aisle, feeling overwhelmed, thinking, "There's no way I can cook Indian food at home"? You're not alone. I remember feeling the same way, until my grandma, my Amma Amma, showed me what really matters behind those spices.

Welcome back to The Tea on Wellness, the podcast where we steep in good health, warm stories, and just the right amount of spice. I'm Vidya, your host and co-owner of Tea & Turmeric here in beautiful Laguna Beach.

If you've ever looked for an Indian cooking class, wondered where to find real Indian spices, or just wished you could make a dal that tastes like home, you're in the right spot.
Today, I want to tell you a story that's really close to my heart, one that starts with two suitcases and ends with our Indian Made Easy Kit.

[1:50] Growing Up Without Indian Spices in Canada: Two Suitcases from India and a Grandmother's Masalas

[VIDYA]: Growing up in a very small Eastern Canadian town, Indian spices weren't something you could just grab off the shelf. Not cardamom, not turmeric, not even lentils. So every time my grandparents came back from India, it felt like Christmas.

They always brought two suitcases. One for us kids, filled with pretty clothes, bangles, little toys. The other for our grandma, packed full of homemade masalas she and her friends in her village made by hand, sharing laughter and stories.

[3:00] When Amma Amma Opened That Suitcase: What It Smelled Like, What It Felt Like, What It Meant

[VIDYA]: When she opened that suitcase, the kitchen came alive. The warm, earthy scent of toasted coriander, cumin, and cardamom danced in the air, like a Bollywood dance party for your nose. The gentle sizzle from her pan, the clink of her bangles as she stirred, sunlight catching the golden turmeric in her masala dabba, it smelled like home. Like love. Like cultural tradition carried across an ocean.

[3:45] Watching Amma Cook: The Woman Who Glowed and What She Was Really Doing

[VIDYA]: When I was a little kid, I would pull up a chair beside her by the stove and climb up just to watch her cook. And I swear she glowed in that kitchen. She wasn't just cooking. She was creating, nourishing, loving.

[4:15] Never Cook When You're Angry: Amma Amma's Most Powerful Lesson About Food and Energy

[VIDYA]: She also taught me something important. Cooking for your loved ones is the deepest, most profound love language. And she always said, "Vidya amma never cook when you're angry. That energy goes directly into the food. You're feeding your family your anger."

[4:50] Tasting Love in a Bowl of Dal: What a Five-Year-Old Learned That Changed Everything

[VIDYA]: I remember being maybe five or six, watching her make pappu, a creamy dal with tomatoes and spinach. I asked, "Amma amma, why does your food taste soo good? Even better than Mom's."
She smiled, eyes twinkling, and said, "Close your eyes and taste."

And, so I did.

"What do you taste?" she asked.

I said I taste, "Salty. Spicy."

And then it clicked, it all made sense. I opened my eyes and said, "Oh. And I taste your love."

That moment, and her suitcase full of spices, is exactly what inspired our Indian Made Easy Kit.

[5:35] Why Indian Cooking Feels So Overwhelming (And Why Nobody Writes the Recipes Down)

[VIDYA]: Here's the thing about Indian cooking. It can feel pretty daunting. Every family does things their own way. Every region in India has its own spin on the same dish. And most times, recipes aren't even written down. My grandma never ever wrote anything down.

That's why we put together this kit, to help you take away the overwhelm and make it easy to cook real authentic Indian food, even if you've never tried it before.

[6:10] Inside the Indian Made Easy Kit: Four Handmade Spice Blends for Every Indian Dish

[VIDYA]: I keep our Indian Made Easy Kit close by in the kitchen. It has four special handmade blends that will help you cook most Indian dishes:

  • The Veggie Mix is my go-to for any vegetable or lentil dish.
  • The Protein Mix works wonders with chicken, lamb, or fish.
  • The Antha Mix means "everything" in our language. I love sprinkling it on just about anything.
  • And the GG Mix, ginger garlic, is the essential base I use for nearly every Indian dish.

[7:00] A Grandmother's Masala Secrets Passed Down to Her Eldest Granddaughter

[VIDYA]: These blends are truly special to me. Before Amma Amma passed away, she gave me her own recipes for her masala blends, a tradition in so many Indian homes, where a grandmother passes her secrets to her eldest grand daughter. These aren't just recipes we hand off for someone else to make for us. I make every batch myself for the store. It takes a whole day to prepare these blends, but that's how much we care about what we bring to you. Every jar is filled with the same love and attention Amma Amma showed me in her kitchen.

And this kit is really simple to use. About one tablespoon of one blend per pound of whatever you're cooking. That's it.

In just minutes, you have the foundation of a flavorful, authentic curry, whether it's paneer, lentils, vegetables, or meat.

[7:50] Ayurveda and Indian Spices: Why Turmeric, Ginger, and Every Spice in the Kit Is Wellness

[VIDYA]: But it's not just about flavor. In Ayurveda, India's ancient system of medicine, food is our first healer. Turmeric helps calm inflammation and supports digestion. Ginger fires up your digestive fire and helps you absorb nutrients. Every spice has a purpose. They're not just seasonings; they're wellness.

[8:20] Indian Cooking Classes in Laguna Beach, Pink Masala Chai, and Recipes People Actually Love

[VIDYA]: Our Indian Made Easy kit comes with a beautiful recipe booklet. When we created it, we even talked to Indian restaurant owners here in Orange County to understand what dishes people love the most. That's why our kit includes recipes for popular Indian restaurant dishes along with our own family recipes, the ones that tell our story.

We even included what we call "India-ish" recipes for beginners, and "Indian-est" recipes for when you're ready for something truly authentic.

If you're around Laguna Beach, why not drop by one of our cooking classes?

Come on in, sit back, and sip our best-selling pink masala chai, creamy, spiced, and comforting, straight from Amma Amma's recipe. Watch the recipe come together, then enjoy the full meal at the end.

[8:55] Amma Amma's Pappu Recipe: The Easiest Indian Dal You Can Make Tonight

[VIDYA]: People often ask me, "What's the easiest Indian dish I can make tonight?" I always say dal, pappu. It's the most comforting, nourishing everyday dish in almost every Indian home.

Here's Amma Amma's pappu recipe:

  • Half a cup of red lentils.
  • Two cups of water.
  • Two teaspoons of our Veggie Mix.
  • Half a teaspoon of our Antha Mix.
  • Salt to taste.
  • One or two tablespoons of ghee.

Put everything except salt and ghee into a pot. Cover and cook for 20 to 25 minutes, until the lentils are soft and mushy. If it looks too thick, just add water until it's like pancake batter. Then mash gently, add salt to taste, and stir in the ghee.

That's it. Comfort food. It's something we call the food of the gods. In some traditions, dal is even a baby's first solid food during a special ceremony.

[10:25] Betsy, the OG of Indian Made Easy: The Moment That Set the Tone for Everything

[VIDYA]: And before I wrap up, I would love to share one of my favorite moments from our cooking classes. Betsy, who we lovingly call the OG of Indian Made Easy, was the very first person to buy our kit and joined our very first cooking class. She's become such a dear friend to us over the years. After one class and she shared with me, "Vidya, You're like the Julia Child of Indian cooking." Gosh, what an amazing compliment, I still smile so big every time I think about that. And Betsy, if you're listening, thank you, so much. You helped set the tone for everything that came after.

[10:50] Outro: Steep Well, Eat Well, Live Well
