Hey family, welcome back to Recipe Friday. I'm Chef Rick, the blind chef, and today we're creating a dish that proves comfort food and fine dining can live on the same plate. We're taking a humble wild rice and transforming it into crispy harvest wild rice cakes served over a silky charred sweet corn puree with smoky asparagus, bright pickle shallots, and finish with a creamy wasabi sriracha at Yoli that brings just the right amount of heat. Every bite is balanced of crispy, creamy, smoky, bright, and just enough spice to keep you coming back for another bite. So let's head into the kitchen. Ingredients for the Harvest Wild Rice Cakes: 2 tablespoons of country croc dairy-free butter, a half a cup of finely diced celery, a half a cup of finely diced red peppers, two green onion sliced, two garlic cloves minced, one teaspoon of fresh grated ginger, one teaspoon of sriracha, one egg, a quarter cup of follow your heart vegan A's, a quarter cup of Kite Hill dairy-free sour cream, a tablespoon of chopped chives, a quarter cup of hominy drained, two cups of cooked wild rice, a quarter cup of flour, a teaspoon of kosher salt, and a half a teaspoon of black pepper. Now, for the breading, you're gonna need flour, one beaten egg, and panko breadcrumbs and vegetable oil for frying. For the charred sweet corn puree, you're gonna need two cups of sweet corn kernels, one tablespoon of country crock dairy-free butter, a quarter cup of oat milk, two tablespoons of country crock dairy-free heavy cream, salt and white pepper. For the wasabi sriracha aioli, you're gonna need a half a cup of folly your heart vegan's, one teaspoon of prepared wasabi, one to two teaspoons of sriracha, one teaspoon of rice vinegar, and a pinch of salt. You're gonna whisk that until smooth, and you're gonna refrigerate until you're ready to serve. Now for the quick pickle shallots, one shallot thinly sliced, a quarter cup of rice vinegar, a quarter cup of water, and one teaspoon of sugar and a pinch of salt. For the charred asparagus, you're gonna need 8 to 12 asparagus spears, 1 tablespoon of olive oil, salt and pepper. Now, I know that's a lot, but this is gonna be delicious. So let's build the harvest wild rice cakes. You want to saute the celery and peppers and dairy-free butter until tender. You want to add the garlic and the ginger during the last minutes. Cool completely. You want to mix together the veganese, dairy-free sour cream, egg, hot sauce, chives, hominies, and cooked wild rice. And then you want to fold in the vegetables and flour, season with salt and pepper, tactile cue, pick up a small handful. It should hold together without sticking heavily to your fingers. That's how you know the binder is balanced. Form into six to eight cakes, bread with flour, egg, and panko. You want to fry them until golden. Cook the cakes, the shallow oil for about three to four minutes per side. Audio cue. You should hear a lively but steady frying sound, not roaring, not whispering, but a steady sizzle tells you that the oil is at the right temperature. Aroma cue, the smell changes from breadcrumbs to warm toasted grain with buttery vegetables. That's your cue to flip it. For the charred corn, you want to cook the corn in a dry skillet until lightly charred. Blend with dairy-free butter, oat milk, and dairy-free heavy cream until silky smooth, and then you want to lighten the season. Aroma cue, the corn should smell sweeter as it chars just a hint of smokiness. For the charred asparagus, sear over medium-high heat until tender crisp. Tactile cue. The asparagus should bend slightly but still have that little snap. Plating. You want to spread a generous swipe of the charred sweet corn puree across the center of the plate. Place two harvest wild rice cakes slightly overlapping on top. Lean the three asparagus spares against the cake. Scattered with the pickle shallots around the plate. Add small dots of wasabi, sriracha, aioli around the cakes or create one elegant brush stroke along the edge of the plate. Finish with microgreens, fresh chives, black sesame seeds, and lightly sprinkle of sea salt. Flavor profile. The first bite starts with a crisp texture of wild rice cakes. Then come the creamy sweetness of the charred corn. The wasabi brings a quick burst of warmth. The sriracha follows with a little linger heat. The pickle shallots brightens everything together with acidity, and the smoky asparagus ties the entire plate together. Bite after bite delivers another layer of flavor. Allergen notes contains eggs, wheat, it's dairy-free. For gluten-free preparation, substitute gluten-free flour and panko. Health notes: Wild rice is naturally rich in fiber and antioxidants. Corn provides natural sweetness and lutin for the eye health. Asparagus is packed with folate and vitamin K. Ginger supports digestion. The wasabi and sriracha add bold flavor without relying on excess fat. Restaurant cooking isn't about making food complicated, it's about creating balance. Every component on this plate has a purpose. The sweetness softens the spice, the acidity cuts through the richness, the crunch contrasts the creaminess. When every bite gives you something different, that's when you're creating a memorable dish.
