Hey family, Chef Rick, and welcome back to Flavor Lab Wednesday here on Unsink Cuisine, Cooking Without Limits. Now, Monday, we spent some time getting to know legumes. We picked some up. We felt how hard they were. We listened to the simmer and we talked about how to recognize when they're done. But today, I want to answer two questions that every cook eventually asks. Why do beans become creamy? And why do so many recipes tell us to soak them first? Because if you ever cooked a pot of beans that stayed tough or ended up perfectly creamy and delicious, you already know there's a big difference. And the good news is your senses can help you understand exactly what's happening. So let's get into it. Part one A dry bean is like a locked door. Let's start before the cooking even begins. Pick up a dry bean and roll it between your fingers. Tac tau Q. Feel how hard it is. Solid, dense, almost like tiny pebbles. There is very little moisture inside. Everything is tightly packed together. Sensory reminder At this stage, the bean is basically locked up. The moisture we need it for tenderness hasn't made its way inside yet. That's why the bean feels so different from cooked beans. Part 2. Why do we soak beans? Now, let's add water into the conversation. Take a dry bean and imagine it sitting in a bowl of water overnight. Tactile cue. The next day, pick it up. Notice how it feels different. Slightly larger, slightly softer, but not cooked. Just hydrate it. What's happening is the bean is slowly pulling water into itself. Think of it like a sponge waking up after a long nap. The water starts softening the outer layers and preparing the inside for cooking. That's why soaking beans can help cook more evenly and why many cooks choose to do it. Part 3.
