Hey family, welcome back to Recipe Friday. I'm Chef Rick, the blind chef. Today we're making one of the Caribbean's most beloved comfort foods, Jamaican rice and peas. Despite the name, this disc is traditionally made with red kidney beans, fragrant coconut milk, herbs, and warm island spices that slowly come together into one incredible pot of flavor. This recipe is all about patience. The aroma builds layer by layer. The sounds tell you when the rice is ready, and every bite is creamy, savory, lightly spiced, and comforting. So go grab your favorite pot and let's get cooking. Ingredients: 1 tablespoon of olive oil, 3 cloves of garlic minced, half medium onion diced, 2 scallions sliced, 2 sprigs of fresh thyme, half a teaspoon of ground allspice, 1 bay leaf, 1 whole scotch potted pepper or habanero or jalapeno. 1 14 ounce can of Goya small red kidney beans and sauce. 1 full can of full fat coconut milk, 1 12 cups of water, 1 teaspoon of kosher salt or to taste, and 2 cups of basmati rice rinsed. Step 1. We're gonna build our flavor base. Heat the olive oil over medium heat. Add the onion, garlic, and scallions. Cook for about 3 to 4 minutes until softened. Stir in the thyme, ground allspice and bay leaf. Aroma cue. You'll first notice sweetness from the onions, followed by a rich aroma of garlic. As the thyme and allspice warm, the kitchen begins to smell unmistakably like the Caribbean. Step 2. Build the cooking liquid. Add the kidney beans with their sauce. Pour in the coconut milk and water. Carefully place the whole scotch bonnet into the pot of water without breaking it. But at some point you're gonna want to break it. Stir gently and bring everything together to a gentle simmer. Audio cue. Listen for a slow, steady simmer. You should hear a soft bubbling, not a royal boiling. Aroma cue. The creamy coconut milk blends with the herbs and spices, creating a warm, slightly sweet aroma with hints of thyme and allspice. Step 3. Cook the rice. Stir in the rinsed basmati rice. Reduce the heat to low cover pot with a tight-fitting lid and cook for 20 to 25 minutes, or until the rice is tender and the liquid has been absorbed. Audio cue. The rice cooks, the bubbling becomes quieter. Near the end of the cooking, you'll hear very little movement inside the pot. That's your cue. The rice has absorbed most of the liquid. Step 4. Rest and fluff. Remove the pot from the heat. Let it rest covered for 10 minutes. Carefully remove the thyme stems, the bay leaf, and the scotch bonnet pepper. Fluff the rice gently with the fork before serving. Tactile cue. When properly cooked, the rice should feel light and fluffy as the fork moves through it. The beans should remain tender while the grain stays separate, not sticky or mushy. Plating. You want to spoon the rice and beans into a warm serving bowl or onto individual plates. Serve alongside grilled chirped chicken, roasted vegetables, seafood, or enjoy it as a satisfying meal on its own. Finish with a few slices of scallion for that fresh burst of flavor.
